Chewy Cherry Cowboy Cookies are bursting with the good stuff...chocolate chips, pecans, coconut, oats, and dried cherries! You and your family will LOVE them!

It's time for the Secret Recipe Club reveal for April and this month I was assigned to the delicious blog A Spoonful of Thyme. I love Kate's philosophy of always being able to find the "thyme" to cook and enjoy family meals! As a mother of three grown children, eating a meal around the family table was always a priority for me as my kids were growing up. And to this day, I still make a priority in my family, even though most nights these days, it's just me and my husband.

A Spoonful of Thyme is full of so many recipes that really appealed to me! I had a very difficult time narrowing my choice for today's reveal down to one recipe. I have Orzo Chicken Salad and White Pizzas with Arugula bookmarked for the future and am looking forward to trying them. However, for today's reveal, I made Kate's recipe for Cowboy Cookies.

When the boys come home from college for breaks, I like to have fresh baked cookies on hand for them. It just so happened, both boys were going to be home for awhile last week and these cookies were just begging to be made!

We loved them! They are so full of so many yummy things! I did change the recipe just a tad by adding dried cherries to the batter and using a mix of milk and semi-sweet chips in place of the semi-sweet chocolate chunks in the original recipe.

This recipe made enough cookies for the boys to snack on when they were home and to take back to school with them in a little care package from home. Give them a try! If you are a chocolate chip cookie lover, you will love this chewy, yummy version!

Chewy Cherry Cowboy Cookies

Chewy and full of everything yummy...chocolate chips, oats, coconut, pecans, and dried cherries!

Ingredients

Instructions

Preheat oven to 350 degrees. Line cookie sheets with parchment or use a silpat.

In medium bowl, combine the flour, baking soda, salt, and baking powder. Set aside.

In large bowl, beat the butter and the sugars with an electric mixer until light and fluffy (about 3 minutes). Add one egg at a time, beating after each addition. Continue to beat until well combined. Add in the vanilla.

Mix in the flour mixture into the butter mixture with mixer on low until combined. Stir in the oats, chips, pecans, coconut and dried cherries.

Using a small cookie scoop, drop cookies onto prepared cookie sheets spacing about 2" apart.

Bake in oven about 10 - 12 minutes, or until edges just start to brown. Remove from oven and allow to cool on cookie sheet for about 2 minutes before removing to wire racks to cool completely.

Yield: approx. 5 dozen cookies

Prep Time: 00 hrs. 15 mins.

Cook time: 00 hrs. 30 mins.

Total time: 45 mins.
