  • pound cherry rhubarb
  • 1 1/2 c. sugar
  • 2 1/4 c. water

  1. Wash and cut up rhubarb, don't peel. Add in 2 1/4 c. water and 1 1/2 c. sugar; cook in an open kettle for 1 to 2 min after starting to boil. Time will depend on how young the rhubarb is. If you put a lid on the rhubarb, it will mash up. Let stand a few hrs for the rhubarb to absorb sugar from juice.
