  • 4 Large eggs, beaten
  • 2 c. sugar
  • Dash of salt
  • 2 (12 ounce.) cans evaporated lowfat milk
  • 5 c. lowfat milk
  • 1 tbsp. vanilla extract
  • 1 c. minced pecans
  • 1 (10 ounce.) jar maraschino cherries, liquid removed and minced

  1. Combine Large eggs, sugar, and salt; blend well. Add in evaporated lowfat milk, lowfat milk, and vanilla. Stir in pecans and cherries.
  2. Pour mix into freezer can of a 5 qt, hand turned or possibly electric freeze. Freeze according to manufacturer's instructions. Allow ice cream to ripen at least 1 hour. Yields 1 hour.
