.%20I%E2%80%99m%20sure%20that%20by%20the%20time%20I%20drenched%20them%20in%20sugar,%20chocolate%20and%20buttery%20rich%20dough%20all%20those%20health%20benefits%20went%20down%20the%20tube.%20Oh%20well.%3C/p%3E%3Cp%3EThe%20Mr.%20who%20doesn%E2%80%99t%20care%20that%20much%20for%20sweets%20suggested%20hand%20pies.%20If%20Mr.%20Sweet%20Sensations%20wants%20hand%20pies%20that%E2%80%99s%20what%20he%20gets.%20I%20get%20a%20little%20squeamish%20when%20working%20with%20pie%20dough%20but%20I%20gave%20it%20the%20old%20college%20try.%20This%20was%20the%20first%20time%20I%E2%80%99d%20made%20or%20eaten%20cherry%20pie%20and%20I%20was%20pleasantly%20surprised.%20I%20think%20the%20canned%20pie%20fillings%20are%20what%20turned%20me%20off.%20Homemade%20is%20the%20way%20to%20go%20my%20friends!%3C/p%3E%3Cp%3ECherry%20Hand%20Pies%20%E2%80%93%20Adapted%20from%20Chocolate%20Moosey%20and%20MyRecipes.com%3C/p%3E%3Cp%3EDough%3C/p%3E%3Cp%3EFor%20the%20dough:%20Cut%20%C2%BD%20cup%20butter%20into%20small%20cubes%20and%20break%20the%20almond%20paste%20into%20small%20pieces%20let%20them%20both%20chill%20for%2015%20minutes.%20Stir%20together%20flour%20and%20salt.%20Cut%20butter%20and%20almond%20paste%20into%20flour%20mixture%20with%20a%20pastry%20blender%20until%20it%20resembles%20small%20peas.%20Gradually%20stir%20in%20vodka%20(woo-hoo)%20and%20%C2%BC%20cup%20ice-cold%20water%20with%20a%20fork,%20stirring%20just%20until%20dough%20begins%20to%20form%20a%20ball%20and%20leaves%20the%20sides%20of%20bowl,%20adding%20up%20to%201%20TBS%20more%20water%20if%20necessary.%20Place%20dough%20on%20plastic%20wrap;%20shape%20into%20a%20flat%20disk.%20Divide%20dough%20into%2012%20portions.%20Shape%20each%20into%20a%20ball%20and%20roll%20into%20a%205-inch%20circle.%20Luckily,%20I%20have%20a%205%E2%80%9D%20cake%20pan%20which%20made%20this%20part%20easier.%20Stack%20circles%20between%20layers%20of%20plastic%20wrap%20or%20wax%20paper.%20Cover%20with%20plastic%20wrap;%20chill%202%20to%2024%20hours.%3C/p%3E%3Cp%3EWhile%20the%20dough%20is%20chilling%20make%20the%20filling,%20ha!!!%20In%20a%20large%20saucepan%20combine%20the%20cherries%20and%20sugar%20and%20let%20set%20for%20at%20least%2030%20minutes.%20Macerating%20them%20draws%20out%20some%20of%20the%20moisture%20and%20lets%20the%20fruit%20soak%20in%20its%20own%20juices.%20This%20is%20the%20juice%20that%20I%20used.%20In%20a%20large%20saucepan%20combine%20the%20sugared%20cherries,%201%20TBS%20of%20juice,%20water%20and%20cornstarch.%20Stir%20over%20medium%20heat%20until%20thick%20and%20bubbly.%20Cook%20an%20additional%20two%20minutes%20stirring%20constantly.%20Remove%20from%20heat%20and%20stir%20in%20vanilla.%20Cool%20to%20room%20temperature%20before%20using.%3C/p%3E%3Cp%3EWorking%20with%20one%20circle%20at%20a%20time,%20spoon%201%20TBS%20of%20the%20cherry%20mixture%20into%20center%20of%20each%20and%20fold%20dough%20over%20filling.%20Press%20edges%20together%20with%20a%20fork%20to%20seal.%20Place%20on%20a%20parchment%20paper-lined%20baking%20sheet%20or%20spray%20the%20sheet%20with%20non%20stick%20spray.%20Using%20a%20fork%20prick%20the%20top%20of%20each%20one.%20Mine%20baked%20at%20350%20%C2%B0%20for%2030%20minutes.%20The%20original%20recipes%20says%20to%20bake%20at%20425%C2%B0%20for%2015%20to%2020%20minutes%20or%20until%20golden.%20Remove%20from%20pan%20to%20a%20wire%20rack,%20and%20cool%20to%20room%20temperature.%20I%20couldn%E2%80%99t%20resist%20adding%20a%20light%20powdered%20glaze%20for%20a%20little%20extra%20sweetness.%20You%20can%20always%20use%20an%20egg%20wash%20instead%20of%20glazing.%3C/p%3E){kind=link}
