  • 1 c. butter
  • 1 c. firmly packed brown sugar
  • 1 x (8 ounce) package minced dates
  • 1 x egg
  • 3 c. crispy rice cereal
  • 1 c. coconut flakes
  • 1/2 c. maraschino cherries -- liquid removed and minced
  • 1 Tbsp. vanilla
  • 2 1/2 c. coconut flakes -- for rolling

  1. In 10 inch skillet, heat butter over medium heat. Stir in sugar and dates; remove from heat. Stir in egg. Return to heat; continue cooking over medium heat, stirring constantly, till mix comes to a full boil, 4 to 6 min.
  2. Boil, stirring constantly, 1 minute; remove from heat. Stir in rice cereal, 1 c. coconut flakes, cherries and vanilla till moistened. Let stand 10 min.
  3. Shape rounded tablespoonfuls into 1 inch balls. Roll each ball in remaining flaked coconut.
  4. Yield: about 5 dozen (2 cookies per serving)
