Hello, again. It's been almost a week since I've had a chance to post this recipe. This is the second dessert recipe in a row. I don't have any dinner recipes ideas to share, because we are grilling just about every meal, and at that it's simple (but tasty) fare-- grilled chicken, salmon, veggies and burgers.
This recipe was a smashing success, I tell you! Whole Foods had organic Bing cherries on sale for $2.99 a pound, and I stocked up. Originally, I wanted to bake a cherry pie. %20fare--%20grilled%20chicken,%20salmon,%20veggies%20and%20burgers.%3C/p%3E%3Cp%3EThis%20recipe%20was%20a%20smashing%20success,%20I%20tell%20you!%20%20Whole%20Foods%20had%20organic%20Bing%20cherries%20on%20sale%20for%20$2.99%20a%20pound,%20and%20I%20stocked%20up.%20%20Originally,%20I%20wanted%20to%20bake%20a%20cherry%20pie.%20%20Then,%20I%20stumbled%20across%20two%20different%20recipes--%20one%20was%20for%20a%20cherry-apricot%20tart.%20%20I%20had%20never%20thought%20of%20combining%20these%20two%20summer%20fruits,%20but%20I%20knew%20instantly%20that%20these%20would%20pair%20well%20together.%20%20Then,%20I%20stumbled%20on%20a%20recipe%20for%20a%20crostata%20at%20%22Cowgirl%20Chef%22.%20%20I%20liked%20the%20crust%20recipe%20and%20I%20especially%20liked%20the%20idea%20of%20a%20ricotta%20filling.%20%20Crostatas%20(or%20Gallettes)%20are%20what%20I%20consider%20to%20be%20%22free%20form%22%20pies.%20%20They're%20rustic.%20They're%20fast%20and%20easy.%20%20You%20can%20use%20a%20store%20bought%20crust,%20but%20I%20prefer%20to%20make%20my%20own.%20%20I'm%20always%20game%20to%20try%20new%20pie%20crust%20recipes,%20and%20this%20one%20used%20all%20butter%20and%20a%20touch%20of%20sugar.%3C/p%3E%3Cp%3EThe%20key%20to%20great%20pie%20crusts%20is%20to%20use%20very%20cold%20butter%20and%20don't%20over%20work%20the%20dough.%20%20As%20a%20note,%20I%20am%20a%20full%20convert%20to%20buying%20only%20unbleached%20flour--%20to%20be%20specific,%20I%20buy%20King%20Arthur%20Unbleached%20All-Purpose%20Flour.%20%20Once%20the%20dough%20chilled%20for%20about%20an%20hour,%20I%20rolled%20it%20out%20to%20about%209-inches%20wide.%20%20The%20uneven%20edges%20are%20fine,%20as%20I'll%20be%20folding%20the%20edges%20over.%20%20I%20have%20a%20tutorial%20on%20how%20to%20make%20my%20fool-proof%20pie%20crust%20here.%3C/p%3E%3Cp%3EI%20adapted%20the%20ricotta%20filling%20a%20bit.%20%20I%20decided%20to%20add%20orange%20zest,%20and%20to%20omit%20using%20cinnamon.%20I%20simply%20whisked%20in%20two%20eggs%20and%20vanilla,%20and%20set%20it%20in%20the%20refrigerator%20(%20you%20could%20easily%20do%20this%20the%20day%20before).%20%20Next,%20I%20peeled%20and%20pitted%203%20apricots%20and%20sliced%20them.%20I%20pitted%20roughly%2020%20Bing%20cherries.%3C/p%3E%3Cp%3EI%20added%20about%201/4%20tsp%20of%20almond%20extract%20and%20the%20juice%20of%201/2%20small%20lemon.%20I%20sweetened%20the%20fruit%20with%203%20Tablespoons%20of%20sugar%20and%20about%201%20teaspoon%20of%20Clearjel%20(you%20can%20buy%20this%20at%20either%20King%20Arthur%20Flour%20or%20on%20Amazon).%20%20If%20you%20don't%20have%20Clearjel,%20then%20you%20use%20always%20use%20cornstarch.%20%20Set%20that%20aside.%20%20On%20a%20whim,%20I%20decided%20to%20add%20a%20very%20thin%20layer%20of%20jam.%20%20I%20do%20this,%20sometimes,%20to%20make%20sure%20that%20I%20don't%20end%20up%20with%20soggy%20crusts.%20%20I%20didn't%20have%20apricot%20jam,%20but%20%20I%20had%20%20a%20lovely%20jar%20of%20Peach%20&%20Armagnac%20jam%20that%20the%20lovely%20folks%20at%20East%20India%20Company%20sent%20to%20me.%20%20It's%20wonderful%20jam,%20and%20I'm%20sad%20that%20most%20of%20it%20has%20been%20eaten%20and%20thoroughy%20enjoyed.%3C/p%3E%3Cp%3EI%20decided%20to%20change%20how%20I%20assembled%20the%20crostata%20from%20the%20original%20recipe,%20by%20reversing%20the%20steps.%20%20I%20carefully%20spread%20the%20ricotta%20filling,%20on%20top%20of%20the%20jam--%20leaving%20a%203%22%20border.%20%20Then,%20I%20piled%20the%20fruit%20on%20top%20of%20the%20ricotta%20filling.%3C/p%3E%3Cp%3EI%20carefully%20folded%20the%20edge%20of%20the%20pastry%20over,%20and%20then%20brushed%20on%20an%20egg%20wash...%3C/p%3E%3Cp%3EWith%20the%20oven%20preheated%20to%20350F%20I%20baked%20this%20for%20about%2045%20minutes.%20%20Halfway%20through,%20I%20checked%20on%20my%20crostata%20and%20I%20was%20so%20sad...%20my%20lovely%20folded%20edges%20had%20melted%20into%20one%20flat%20pizza%20looking%20crust.%20I%20realized,%20too%20late,%20there%20was%20not%20enough%20flour%20in%20the%20dough%20(original%20recipe%20only%20called%20for%20one%20cup).%20%20I%20should%20have%20gone%20with%20my%20gut%20instinct,%20as%20I%20felt%20that%20the%20dough%20felt%20very%20soft%20as%20initially%20I%20rolled%20it%20out.%3C/p%3E%3Cp%3EAesthetically,%20I%20was%20disappointed.%20%20However,%20the%20crostata%20smelled%20wonderful,%20and%20I%20still%20had%20high%20hopes%20that%20the%20flavor%20would%20be%20a%20winner.%3C/p%3E%3Cp%3EThis%20is%20what%20the%20crust%20really%20should%20have%20looked%20like%20(this%20is%20a%20plum%20gallette%20that%20I%20make%20in%20the%20Fall.)%3C/p%3E%3Cp%3EI%20let%20this%20crostata%20cool%20to%20room%20temperature--%20just%20very%20slightly%20warm.%20I%20sprinkled%20my%20slice%20with%20a%20little%20bit%20of%20powdered%20sugar...%3C/p%3E%3Cp%3EEnjoy!%3C/p%3E){kind=link}
