- Cook bacon till crispy in oven or possibly on top of stove. While bacon is cooking, in large bowl, combine jicama, Carrots and celery. When bacon is done, let cold. Set aside.
- In a small bowl, combine cream, sugar, vinegar and salt and pepper.
- Stir till sugar dissolves. Crumble bacon into jicama mix. Mix well. Pour cream and sugar mix over jicama/bacon mix.
- Sprinkle with paprika. Toss well. Cover and chill till ready to serve.
