:%3C/p%3E%3Cp%3E2.0%20g%3C/p%3E%3Cp%3E3.2%20g%3C/p%3E%3Cp%3E0.4%20g%3C/p%3E%3Cp%3E38%20kcal%3C/p%3E%3Cp%3ETips%20for%20making%20the%20spread%3C/p%3E%3Cp%3EMaking%20of%20this%20spread%20doesn%E2%80%99t%20require%20any%20tricks,%20so%20let%E2%80%99s%20get%20started.%3C/p%3E%3Cp%3EClean%20and%20dry%20the%20kale%20leaves.%20Tear%20the%20leaves%20into%20smaller%20pieces.%20Discard%20the%20thick%20stems%20in%20the%20middle.%3C/p%3E%3Cp%3EPlace%20the%20kale%20leaves%20and%20the%20garlic%20cloves%20in%20a%20food%20processor%20bowl%20where%20you%20have%20attached%20a%20cutting%20blade.%20If%20you%20don%E2%80%99t%20have%20food%20processor,%20blender%20is%20also%20fine.%3C/p%3E%3Cp%3EProcess%20until%20very%20finely%20chopped%E2%80%A6%3C/p%3E%3Cp%3EAdd%20the%20shredded%20Swiss%20cheese.%3C/p%3E%3Cp%3EProcess%20again%20until%20relatively%20smooth.%3C/p%3E%3Cp%3ERemove%20the%20blade%20or%20if%20you%20cannot%20do%20that,%20transfer%20the%20mixture%20to%20another%20bowl.%20Add%20the%20cream%20cheese.%3C/p%3E%3Cp%3EMix%20with%20spoon%20until%20well%20mixed.%20Add%20more%20cream%20cheese%20if%20you%20prefer%20softer%20consistency.%20Mix%20well%20after%20each%20addition.%3C/p%3E%3Cp%3ESpoon%20the%20spread%20into%20a%20nice%20serving%20bowl%20and%20serve.%3C/p%3E%3Cp%3EMy%20experiments%20with%20this%20recipe%3C/p%3E%3Cp%3EIt%20all%20started%20when%20I%20was%20wondering%20what%20to%20do%20with%20all%20the%20kale%20I%20have.%20In%20the%20spring%20I%20was%20devastated%20because%20something%20ate%20my%20newly-grown%20kale%20leaves,%20but%20that%20something%20disappeared%20during%20summer%20and%20I%20got%20a%20big%20crop%20of%20kale%20in%20the%20end.%20It%20was%20freezing%20cold%20a%20couple%20of%20days%20ago%20and%20I%20took%20some%20artistic%20photos.%20Luckily%20kale%20doesn%E2%80%99t%20care%20about%20frost%E2%80%A6%3C/p%3E%3Cp%3EFirst%20I%20was%20thinking%20of%20kale%20pesto,%20but%20that%20sounded%20too%20worn%20out.%20Then%20I%20thought%20of%20savory%20spread.%20Something%20rich%20and%20flavorful.%3C/p%3E%3Cp%3EI%20have%20a%20German%20cookbook%20with%20recipes%20only%20for%20savory%20and%20sweet%20spreads.%20There%20I%20found%20a%20nice%20recipe%20with%20arugula,%20Swiss%20cheese,%20butter%20and%20white%20wine%20vinegar.%20Instead%20of%20arugula,%20I%20wanted%20to%20try%20out%20kale.%20I%20thought%20I%20leave%20out%20the%20vinegar%20and%20add%20garlic%20instead.%3C/p%3E%3Cp%3EI%20was%20pondering%20what%20amounts%20to%20use.%20In%20the%20German%20recipe%20there%20was%20only%201.75%20oz%20(50%20g)%20arugula.%20The%20amount%20felt%20small,%20but%20that%20was%20understandable:%20the%20flavor%20of%20arugula%20is%20quite%20strong,%20mustardy%20and%20even%20slightly%20hot.%20As%20for%20kale,%20the%20flavor%20is%20somewhat%20strong%20but%20far%20away%20being%20hot.%3C/p%3E%3Cp%3EI%20decided%20to%20use%204%20oz%20(115%20g)%20kale%20leaves,%206%20oz%20(170%20g)%20Swiss%20cheese,%208%20tablespoons%20(4%20oz%20=%20115%20g)%20softened%20organic%20butter,%205%20small%20garlic%20cloves%20and%201%20tablespoon%20unsweetened%20mustard.%20Mustard%20I%20chose%20to%20give%20some%20kick.%20Well,%20and%20I%20simply%20thought%20it%20goes%20well%20with%20the%20flavor%20of%20Swiss%20cheese.%3C/p%3E%3Cp%3EFirst%20I%20added%20the%20kale%20leaves%20to%20a%20food%20processor%20and%20processed%20them%20until%20they%20were%20tiniest%20pieces.%20The%20smell%20of%20kale%20was%20really%20strong.%20It%20was%20really%20exuding%20health!%3C/p%3E%3Cp%3EI%20added%20the%20shredded%20Swiss%20cheese%20and%20processed%20the%20mixture%20again.%20Finally%20I%20added%20the%20butter%20and%20the%20crushed%20garlic%20cloves%20and%20mixed%20the%20whole%20thing%20with%20a%20spoon.%3C/p%3E%3Cp%3EEagerly,%20I%20tasted%20the%20result.%20To%20my%20big%20surprise%20butter%20was%20feeling%20too%20greasy%20and%20the%20kale%20flavor%20was%20really%20strong,%20I%20would%20say%20overpowering.%20I%20was%20wondering%20if%20full-fat%20cream%20cheese%20would%20be%20a%20better%20choice.%3C/p%3E%3Cp%3EIn%20my%20next%20experiment%20I%20simply%20replaced%20the%20butter%20with%206%20oz%20(170%20g)%20cream%20cheese%20and%20omitted%20the%20mustard.%20Much%20better!%20Perfect,%20actually.%20The%20spread%20was%20quite%20firm%20but%20I%20liked%20it.%3C/p%3E%3Cp%3EI%20got%20the%20idea%20to%20process%20the%20garlic%20with%20the%20kale%20leaves.%20Then%20I%20didn%E2%80%99t%20have%20to%20crush%20the%20garlic%20before%20adding%20it%20to%20the%20mixture.%20The%20idea%20worked%20extremely%20well%20and%20naturally%20saved%20some%20time.%20And%20meant%20less%20dishes.%3C/p%3E%3Cp%3ETips%20for%20variation%3C/p%3E%3Cp%3EIf%20you%20don%E2%80%99t%20like%20garlic,%20you%20can%20leave%20it%20out%20or%20replace%20it%20with%20something%20else.%20Good%20old%20white%20pepper%20or%20black%20pepper%20are%20worth%20trying,%20also%20onion%20powder%20might%20suit%20well.%20A%20teaspoon%20or%20two%20freshly%20squeezed%20lemon%20juice%20is%20also%20a%20great%20addition.%20Raw%20apple%20cider%20vinegar%20gives%20some%20fresh%20tang,%20too.%20You%20can%20also%20add%20more%20salt%20if%20needed,%20but%20for%20me%20the%20saltiness%20of%20the%20Swiss%20cheese%20is%20enough.%3C/p%3E%3Cp%3EYou%20can%20form%20balls%20or%20other%20shapes%20from%20the%20spread%20and%20serve%20them%20in%20parties.%20Forming%20is%20easier%20if%20you%20let%20the%20spread%20set%20in%20the%20fridge%20for%20a%20few%20hours.%3C/p%3E%3Cp%3EThis%20spread%20is%20also%20great%20filling%20for%20savory%20whoopie%20pies.%3C/p%3E%3Cp%3EThe%20rest%20of%20the%20week%20I%E2%80%99m%20going%20to%20spend%20developing%20creepy%20Halloween%20recipes%20for%20my%20Halloween%20party.%20I%20hope%20I%20have%20a%20really%20gruesome%20recipe%20to%20publish%20next%20week.%20Meanwhile,%20you%20can%20take%20a%20puke%E2%80%A6%20sorry,%20look,%20of%20my%20Halloween%20spread%20from%20last%20year.%3C/p%3E%3Cp%3EMake%20a%20Comment%3C/p%3E){kind=link}
