- Saute/fry minced onions in butter in a medium skillet over medium heat, stirring constantly, till tender. Spoon into a lightly greased 13- by 9- by 2-inch baking dish.
- Combine cheeses, reserving 1/2 c. cheese mix for topping. Sprinkle remaining cheese mix over leeks.
- Combine Large eggs, whipping cream, tarragon, salt and pepper in a bowl, stirring with a wire whisk till blended. Pour egg mix over leek mix.
- Bake, uncovered, at 375 degrees for 30 min or possibly till set and lightly browned. Sprinkle with reserved cheese mix; bake and additional 5 min or possibly till cheeses heat. Garnish, if you like. Serve immediately.
- This recipe yields 8 to 10 servings.
