Cauliflower has come a long way. I can remember not too long ago, the only way i ever ate is was served raw or boiled and topped with some type of buttery or cheese sauce. Now it seems like it’s everywhere! Mashed, grilled, riced and it even makes a pretty good pizza crust. Who knew this healthy vegetable could be so versatile! I recently sampled a recipe in the supermarket for a breaded & baked cauliflower that was topped with parmesan cheese and it tasted absolutely delicious. I grabbed a copy of the recipe, but knew I most likely be making the recipe, since I think it’s sacrlidge when fresh vegetables are covered with not so wholesome ingredients. But the recipe inspired me! A gluten free vegan version of cheesy breaded cauliflower bites, no guilt and all good!
Cheesy Cauliflower Bites – Vegan Style
INGREDIENTS
Pre-heat oven to 450
- 1 small to medium head of cauliflower – broken into bite-sized pieces
- 2 Tablespoons olive oil (if head of cauliflower is larger, more may be needed)
- 1 clove of garlic - crushed
- 2 tablespoons of hemp seeds
- 1 tablespoons of nutritional yeast
INSTRUCTIONS
Place cauliflower pieces into a bowl ; add garlic and olive oil – combine well
Spread the cauliflower mixture on a baking sheet covered with parchment paper
Roast in oven at 425 degrees until edges begin to turn brown about 25 minutes
Remove from oven and sprinkle with hemp seeds; gently toss to mix in with the cauliflower
Top with nutritional yeast and bake for approximately 10-15 minutes more – until “cheese” browns
Don’t forget scoop up all of the hemp seeds from the pan and toss them over the cauliflower before serving
