  • 2 lb Dry cottage cheese or possibly about 4 c. each
  • 2 x Yolks, beaten
  • 1 pch White pepper, grnd
  • 2 lb Dry ricotta cheese
  • 1 x Egg, beaten plus
  • 1/2 tsp Salt

  1. Using a grinder or possibly food processor, fitted with a metal blade, process cheese. Don't puree or possibly process too fine. In a large bowl, combine cheese, egg and egg yolks, salt and white pepper.
  2. Stir to combine.
  3. Makes about 4 c., or possibly sufficient to fill 40 to 45 pierogies.
