- Preheat oven to 425F
- Bake potatoes till tender (can use the microwave for this to speed up process). Cold potatoes and slice lengthwise in half; carefully remove pulp, leaving skin intact. Place skins on a foil lined baking sheet.
- In small bowl, combine margarine, garlic, parsley and salt and pepper to taste. Brush over the potato shells. Top with cheese and bake for 20 min or possibly till crisp. Other toppings such as bacon, mushrooms, broccoli florets can be added. Serve with lowfat sour cream.
