Living in Wisconsin I always have cheese! Which means I can always make soup! You can add almost anything to this soup; bacon, sausage, bratwurst, or potatoes. I like to eat this soup with a nice big slice of buttered sourdough bread!
Cheddar Cheese Beer Soup
Ingredients
- 4 T
- butter
- 1/3 cup
- sliced green onions, white and green parts
- 1/4 cup
- diced green pepper
- 1 medium
- carrot, peeled and shredded
- 4 T
- flour
- 3-(10-1/4 oz)
- cans chicken stock
- 1/2 cup
- beer
- 1 T
- Dijon mustard
- 2 cups
- half & half, or milk, warmed
- 2 cups (8 oz)
- sharp cheddar cheese, shredded
- 4 T
- sour cream
Cooking Directions
Melt butter in a large saucepan. Add onion, green pepper and carrot. Cook and stir over medium high heat until vegetables are tender. Stir in flour, cook 1 minute. Add stock, beer and mustard. Cover and simmer 30 mins. Add warmed half & half or milk, cheese and sour cream. Stir until cheese melts. Garnish with shredded cheese, sour cream and fresh ground pepper.
