I was first introduced to Vidalia Onions when I worked at
Cracker Barrel Old Country Store.
Back then Cracker Barrel sold Vidalia Onions in
Two, five and ten pound bags.
The best way to store onions is to hang them up in mesh bags and
Not to let them touch each other.
At that time, I had never heard of Vidalia Onions.
I was only familiar with onions that weren't "sweet"
You can imagine my shock and horror when my boss bit into a
whole, peeled Vidalia onion and started to eat it like an apple.
That's when I discovered,
the wonderful and sweet flavor of these remarkable onions,
grown in Vidalia GA.
When my daughter lived in Athens GA
I was hoping to visit Vidalia GA and
stop at a Vidalia onion farm but I never had the opportunity.

since my Cracker Barrel days and
my vacation in Georgia.

This recipe is really very easy to prepare.
The Ritz cracker crust adds that special touch and
I am definitely going to incorporate Ritz cracker crust recipe
into future recipes....

Vidalia Onion Pie was beyond delicious~
I enjoyed every single bite:)
I think Vidalia onion pie would be perfect served alongside grilled meats.
- This summer, instead of serving the usual potato salad with grilled foods,
- serve this wonderful Vidalia onion pie~
- 1 cup Ritz cracker crumbs,
- (I used vegetable flavored Ritz crackers)
- 1/2 stick butter, melted
- 2 cups vidalia onions, thinly sliced
- 2 T butter
- 2 eggs
- 3/4 cup milk
- 3/4 t salt
- dash pepper
- 1/4 cup sharp cheddar cheese
- smokey paprika
- parsley
Directions:
Mix Ritz crackers and melted butter
Press into an 8 inch pie plate
Saute Vidalia onions in 2 T butter
Until clear, but not brown.
Spoon into pie crust
Beat eggs with milk, salt, pepper and
pour over onions.
Sprinkle with cheese and paprika
Bake at 350 for 30 minutes
Or until firm in the center.
Sprinkle with parsley.
