.%20I%20remembered%20that%20last%20year,%20my%20mum%20bought%20me%20The%20Hairy%20Bikers'%2012%20Days%20of%20Christmas%20cookbook.%20What%20should%20I%20find%20among%20the%20Boxing%20Day%20recipes%20but%20a%20delicious%20looking%20Turkey%20and%20Ham%20Pie%20to%20be%20served%20cold.%20Of%20course%20my%20pastry%20went%20wrong%20so%20Nic%20was%20sent%20on%20an%20emergency%20run%20to%20buy%20premade%20pastry.%20Other%20than%20that%20though,%20it%20went%20without%20a%20hitch.%20It's%20like%20Christmas%20dinner%20in%20a%20pie.%3C/p%3E%3Cp%3ETopped%20with%20cranberry%20and%20kumquat%20relish,%20cut%20into%20it%20and%20you%20find%20a%20tasty%20mix%20of%20meat.%3C/p%3E%3Cp%3EGreat%20stuff.%3C/p%3E%3Cp%3ETo%20follow%20the%20pie,%20I%20decided%20to%20go%20with%20trifle.%20Now,%20as%20quintessentially%20English%20as%20trifle%20may%20sound,%20I%20have%20to%20admit%20that%20am%20not%20a%20big%20fan%20of%20English%20trifle.%20Jelly%20with%20sponge%20in%20it%20-%20blech!%20(And%20yes,%20I%20choose%20to%20make%20that%20a%20proper%20technical%20term).%20But%20this%20Gingerbread%20Trifle%20skips%20the%20jelly,%20instead%20offering%20spicy%20gingerbread%20in%20homemade%20custard,%20topped%20with%20cream.%3C/p%3E%3Cp%3ETo%20make%20the%20gingerbread:%3C/p%3E%3Cp%3EBeat%20the%20butter%20and%20sugar%20together%20until%20fluffy.%20Add%20the%20egg%20and%20molasses%20and%20mix.%3C/p%3E%3Cp%3EIn%20a%20separate%20bowl,%20mix%20the%20flour,%20ginger,%20baking%20powder,%20and%20baking%20soda.%20Alternate%20between%20adding%20the%20flour%20and%20the%20water%20to%20the%20butter,%20mixing%20well%20between%20each%20addition.%3C/p%3E%3Cp%3EPour%20into%20a%2013x9%20pan%20and%20bake%20for%2035%20minutes%20at%20350F.%3C/p%3E%3Cp%3EYou%20only%20need%20half%20for%20the%20trifle.%3C/p%3E%3Cp%3ENext%20make%20your%20custard.%20This%20was%20my%20time%20attempting%20this%20so%20I%20was%20pleasantly%20surprised.%20The%20key%20is%20to%20keep%20stirring.%3C/p%3E%3Cp%3EIn%20a%20large%20pan,%20mix%201%201/3%20cup%20sugar,%202/3%20cup%20flour%20and%20a%20dash%20of%20salt.%20Whisk%20in%205%20cups%20of%20milk.%20Cook%20over%20a%20medium%20heat%20(no%20hotter%20or%20it%20will%20scald).%20You%20need%20to%20stir%20constantly,%20and%20cook%20until%20the%20mix%20is%20thickened%20and%20bubbling.%20Then%20add%206%20beaten%20egg%20yolks.%20Keep%20stirring.%20Remove%20from%20the%20heat%20and%20stir%20in%201%20tbs%20vanilla.%3C/p%3E%3Cp%3ENow%20it's%20time%20to%20make%20up%20the%20trifle.%20Layer%20gingerbread%20and%20custard%20in%20a%20trifle%20bowl,%20finishing%20with%20a%20layer%20of%20gingerbread.%20Top%20with%20whipped%20cream%20or%20Cool%20Whip%20and%20finish%20with%20a%20decorative%20handful%20of%20chopped%20Heath%20bars.%3C/p%3E%3Cp%3EAnd%20of%20course,%20the%20best%20part%20of%20Christmas:%20leftovers.%20Since%20I%20didn't%20cook%20an%20entire%20turkey,%20I%20won't%20be%20eating%20every%20permutation%20of%20fowl%20over%20the%20next%20week%20but%20I%20will%20be%20enjoying%20more%20pie%20and%20trifle%20tonight.%20No%20complaints%20here.%3C/p%3E){kind=link}
