%20would%20add%20canned%20mushrooms%20to%20some%20of%20the%20dinners%20she%20cooked%20for%20us%20ungrateful%20kids.%20Bleccccccch.%20I%20just%20couldn't%20bond%20with%20the%20rubbery%20texture%20(which%20my%20brothers%20couldn't%20either),%20and%20I%20swore%20I%20wouldn't%20eat%20a%20mushroom%20for%20as%20long%20as%20I%20live.%20%20Every%20so%20often,%20my%20mother%20would%20torture%20us%20with%20bowls%20of%20Canned%20Cream%20of%20Mushroom%20soup.%20Gross.%3C/p%3E%3Cp%3EFast%20forward%20to%20my%20adult%20years,%20when%20my%20palate%20grew%20less%20fussy%20and%20I%20discovered%20that%20fresh%20mushrooms%20are%20a%20whole%20different%20animal--%20especially%20when%20sauteed%20with%20lots%20of%20butter,%20wine%20and%20garlic.%20%20Suddenly,%20I%20couldn't%20get%20enough%20of%20eating%20mushrooms.%20%20I%20finally%20learned%20how%20to%20make%20homemade%20Cream%20of%20Mushroom%20soup,%20which%20remains%20my%20%231%20favorite%20soup.%3C/p%3E%3Cp%3Ehe%20doesn't%20get%20as%20excited%20about%20them%20as%20I%20do.%3C/p%3E%3Cp%3EI've%20never%20cooked%20Chanterelles,%20and%20have%20always%20wanted%20to.%20%20Last%20year,%20I%20spotted%20some%20at%20Costco%20and%20hesitated%20buying%20them.%20%20A%20few%20days%20later,%20they%20were%20all%20gone,%20and%20I%20never%20saw%20them%20%20again.%20%20This%20year,%20I%20spotted%20them%20and%20immediately%20snatched%20a%20package%20of%20them.%20%20I%20was%20so%20excited%20to%20try%20these%20wild%20mushrooms,%20though%20my%20husband%20was%20a%20bit%20more%20dubious.%3C/p%3E%3Cp%3EThey're%20interesting%20looking,%20and%20some%20were%20almost%20the%20size%20of%20my%20hand!%3C/p%3E%3Cp%3EBecause%20they%20grow%20in%20the%20wild,%20I%20had%20to%20carefully%20wash%20them%20to%20remove%20debris%20of%20conifers,%20dirt%20and%20%22woodsy%22%20debris.%20NOTE:%20Rather%20than%20wiping%20them%20with%20a%20damp%20cloth,%20please%20don't%20judge,%20but%20I%20rinsed%20the%20mushrooms,%20carefully%20checking%20for%20dirt%20or%20debris.%20I%20then%20gently%20shook%20the%20water%20off,%20and%20patted%20them%20dry%20with%20paper%20towels.%20It%20worked%20just%20fine.%20%20I%20debated%20making%20soup%20with%20them,%20but%20I%20wanted%20to%20taste%20their%20meaty%20flavor.%20%20I%20considered%20making%20a%20risotto,%20but%20I%20also%20wanted%20some%20kind%20of%20protein.%20%20Think,%20think,%20think...%3C/p%3E%3Cp%3EI%20had%20read%20that%20Chanterelles%20and%20sage%20are%20a%20perfect%20pairing.%20Fortunately,%20my%20husband%20planted%20a%20few%20healthy%20sage%20plants%20in%20our%20garden%20and%20I%20began%20to%20formulate%20a%20plan.%20%20I%20decided%20to%20sear%20and%20roast%20a%20pork%20tenderloin,%20and%20to%20serve%20it%20atop%20creamy%20polenta%20and%20then%20the%20mushrooms.%3C/p%3E%3Cp%3EI%20tried%20to%20cut%20the%20mushrooms%20into%20pieces%20about%202%22%20in%20size,%20and%20I%20chopped%20some%20fresh%20sage.%3C/p%3E%3Cp%3EI%20began%20to%20saute'%20the%20mushrooms%20in%20a%20little%20olive%20oil%20and%20%20butter,%20and%20let%20them%20cook%20for%20aobut%204-5%20minutes.%20I%20then%20added%20a%20generous%20splash%20of%20white%20wine,%20the%20chopped%20sage%20(you%20could%20use%20parsley,%20instead),%20and%20couple%20cloves%20of%20fresh%20garlic.%3C/p%3E%3Cp%3EI%20let%20the%20mushrooms%20cook%20for%20about%208-10%20minutes,%20and%20set%20them%20aside%20on%20very%20low%20heat%20(to%20keep%20them%20warm).%3C/p%3E%3Cp%3EI%20used%20one%20pork%20tenderloin,%20simply%20seasoned%20with%20salt%20&%20pepper.%20I%20carefully%20seared%20the%20pork%20tenderloin%20in%20an%20oven%20proof%20skillet,%20then%20finished%20roasting%20it%20at%20425F%20for%20about%2020-25%20minutes.%20%20%20While%20the%20pork%20was%20resting,%20I%20made%20a%20quick%20pan%20sauce%20with%20some%20Boiled%20Cider,%20chicken%20stock,%20and%20a%20splash%20of%20white%20wine.%20%20(I%20include%20measurements%20and%20directions%20with%20the%20recipe%20card).%3C/p%3E%3Cp%3EThis%20dinner%20was%20on%20the%20table,%20with%20candles%20and%20a%20glass%20of%20white%20wine,%20in%20less%20than%20an%20hour.%20%20I%20have%20to%20say,%20that%20it%20looked%20pretty%20enough%20to%20be%20served%20at%20a%20restaurant--%20for%20a%20fraction%20of%20the%20cost.%3C/p%3E%3Cp%3ETASTING%20NOTES:%20%20There%20are%20really%20three%20different%20recipes,%20that%20I've%20plated%20for%20our%20dinner.%20Polenta%20is%20something%20we%20love,%20as%20a%20change%20of%20pace%20from%20mashed%20potatoes%20or%20rice.%20%20I%20love%20the%20creamy%20texture%20and%20the%20flavor%20of%20the%20Parmesan.%20%20Pork%20tenderloin%20is%20one%20of%20our%20favorite%20meats,%20because%20it's%20so%20tender.%20%20(Chicken%20breasts%20could%20be%20another%20good%20substitute%20for%20this%20meal.)%20The%20Chanterelle%20mushrooms--%20well...%20my%20husband%20really%20liked%20them.%20In%20fact,%20he%20went%20back%20for%20seconds!%20%20%20They%20have%20a%20meaty%20texture,%20but%20I%20didn't%20find%20them%20to%20feel%20rubbery.%20%20The%20sage,%20and%20the%20apple%20pan%20sauce%20went%20togeth
