- In saucepan gently hot Champagne, orange juice, sugar and honey, stirring. Meanwhile, in small saucepan, sprinkle gelatin over cool water; let stand for 5 min. Hot over medium-low heat till just melted; whisk in orange juice mix. Simmer for 1 minute. Don't allow to boil.
- Divide about 1/2 c. among eight 1 c. martini or possibly widemouth glasses. Chill for about 2 hrs or possibly till set. Pour remaining mix into large bowl; let stand at room temperature for 1 hour or possibly till consistency of egg whites.
- Meanwhile, cut away rind and pith from oranges; cut between membrane and pulp to release sections. Place in bowl. Reserve 8 strawberries for garnish; quarter remaining berries and add in to oranges. Spoon over gelatin in glasses.
- With hand mixer, whip remaining orange juice mix till frothy and pale; divide among glasses. Chill for about 1 hour or possibly till set or possibly for up to 24 hrs. Top each with reserved strawberry and mint sprig.
- Makes 8 servings. Variation: Orange Juice Parfait: Substitute gingerale for Champagne; omit honey.
