Ингредиенты

  • 1 1/2 lb potatoes, cooked, mashed, cooled Salt and pepper to taste
  • 1/3 c. fresh basil or possibly parsley, minced
  • 1/2 c. Romano cheese, grated (or possibly provolone shredded)
  • 2 Tbsp. Marsala extra virgin olive oil
  • 1 x egg and two egg whites
  • 1/4 tsp nutmeg
  • 2 x garlic cloves, chopped
  • 1 x egg white lightly beaten (to brush tops)

Инструкции

  1. In mixing bowl combine potatoes and remaining ingredients. Chill for about 30 min. Shape mix into about 12 cylinder shapes 4 inches long on lightly floured surface.
  2. Grease baking dish, drizzle with extra virgin olive oil, place croquettes in a single layer 1/4 inch apart.
  3. Brush with egg white, drizzle with extra virgin olive oil. Bake in a 350 degree oven for 20 to 25 min.
  4. Variation: Croquettes may be rolled in beaten egg all around, then in bread crumbs.
  5. Cook over medium heat in a non stick skillet with a little extra virgin olive oil till golden all around.
  6. Croquettes may be stuffed with 3/4 inch cubes of mozzarella, cover completely with mashed potato mix, bake.
