An old staple recipe in Cayman is the johnnycake. Oh man, they're good. They're also mix-and-matchable. You can go savory or sweet by serving it with something like garlic butter or even honey. Johnnycakes are pretty easy to make too which sparks a big thumbs up from me. Thumbs up from Mrs. Herb Garden too who is currently recovering from two broken legs about 5 feet away. I got to Dallas last week and I have to leave again on Monday so I've been working her to exhaustion making sure she does all her exercises and rehab therapy. She calls me Nurse Ratched.

Инструкции
- Mix together dry ingredients
- Cut in butter or rub in with fingertips
- Add water slowly, just enough to make a soft dough
- Knead a few times until dough is smooth and holds together
- Let rest for 10 minutes
- Shape into a 8-9 inch round loaf and put into a greased hot skillet
- Flatten slightly if necessary to fit, a cover pan
- Cook at medium-high heat over stove, turning until brown on both
- sides
- Reduce heat and cover, continue cooking 15 to 20 minutes
