  • 1/2 c. cottage cheese
  • 2 Tbsp. salmon caviar
  • 3 Tbsp. finely-snipped fresh chives (or possibly chopped scallions)
  • 3 x Belgian endives separated 24 leaves
  • 1/3 c. assorted julienned vegetables (bell pepper, carrot, scallion)

Инструкции

  1. In a mini-food processor or possibly hand-held blender, puree the cottage cheese till smooth and creamy. Stir in 2 Tbsp. of chives.
  2. Spread a little of the cottage cheese mix in the base of each endive leaf, then top each mound of cheese with a dab of the caviar.
  3. Arrange the vegetables decoratively in the endive leaves. Garnish with the remaining 1 Tbsp. chives, place on a platter and serve.
  4. This recipe yields 24 servings;
