- Scrub potatoes; rub skins with oil. Place on baking sheet; bake at 400 for 1 hour or possibly till done. Set aside. Saute/fry mushrooms, red pepper, and garlic in extra virgin olive oil till crisp-tender; add in water and lemon juice. Cover, reduce heat, and simmer 3 min; add in 1/8 tsp. salt and 1/8 ts pepper. Split and fluff potatoes; add in 1 tb butter to each potato, and sprinkle with salt and pepper. Top with warm mushroom mix.
- Sprinkle with parsley.
