Cauliflower with Flair
This past Sunday, I found a familiar spot on the couch and watched the Grammy Awards. It’s the only awards show I enjoy. I love watching the various artists perform their songs and the seeing the constrasting personalities of the award winners. On one end of the spectrum you have Bruce Springsteen who has that All-American image. On the other end you have Lady Gaga who wows everyone with her outfits. Pairing the two on stage to do a duet would be a total train wreck. However when it comes to cooking, pairing plain ingredients with those that have visual flair is a sure way to create an exciting dish!
Take this side dish as an example. Cauliflower on it’s own is not the most visually appealing or flavorful vegetable. However by adding a melody of salty bacon, bright red cherry tomatoes, crunchy croutons and lemon zest you create a side dish with visual and mouthwatering flair. It’s the type of side dish that catches your eye like Lady Gaga with a taste that’s as cherished as a Bruce Springsteen song.
Cauliflower with Flair
Instruments
- 4 slices bacon, chopped
- 2 cups small (3/4 inch) cauliflower florets
- 10 cherry tomatoes, halved
- 1½ tbsp fresh lemon juice
- Pinch dried thyme
- ½ cup croutons
- 1 tsp freshly grated lemon zest
Lyrics
In a skillet, cook bacon until crisp over medium heat. Transfer to paper towels to drain. Drain skillet of half the drippings.
Add cauliflower to skillet and cook until slightly tender and beginning to brown, about 3 minutes. Add cooked bacon, tomatoes, lemon juice and thyme. Gently toss and let simmer for 1 minute.
Transfer to a serving dish, add croutons and garnish with lemon zest. Serve.
