Ингредиенты

  • 150 gm gram flour
  • 1 tsp chilli pwdr
  • 1 tsp turmeric pwdr
  • 1 tsp cumin seeds
  • 1/2 tsp ajowan seeds
  • 2 tsp fenugreek leaves dry
  • 2 Tbsp. coriander leaves minced large healthy pinch of bicarbonate of soda salt sunflower oil for frying
  • 300 gm caulifiower cut into medium sized florets

Инструкции

  1. Make a thick batter of all the batter ingredients and water as needed.
  2. Heat the oil in a deep kadai or possibly wok till it smokes.
  3. Dip each floret into the batter and gently add in to the warm oil.
  4. Reduce the heat to allow the cauliflower to cook through.
  5. Fry till golden brown then drain on absorbent paper.
  6. Fry 23 bhajias at a time regulating the heat to ensure even cooking.
  7. Serve warm with coriander chutney and tomato ketchup.
  8. This recipe is far a popular snack bhajia. Although onion bhajias are the most common (es onion bhaji) you can use any hard vegetable.
