%20last%20year's%20trip%20was%20after%20the%20BP%20spill.%20%20It%20hurt%20me%20to%20see%20what%20I%20saw.%20%20And%20the%20mess%20and%20sludge%20had%20already%20been%20cleaned%20up%20by%20then.%20%20It%20was%20more%20about%20what%20I%20didn't%20see:%20life.%20%20Wildlife.%20%20Mainly%20birds.%20%20So%20quiet%20and%20still%20and%20eerie%20last%20year.%20%20So%20different%20and%20troubling.%3C/p%3E%3Cp%3ENormally%20I%20look%20forward%20to%20this%20annual%20trip.%20%20This%20year%20I%20found%20myself%20on%20edge%20the%20closer%20it%20came.%20%20Almost%20dreading%20it.%20%20Not%20knowing%20what%20I'd%20find.%20%20Or%20wouldn't,%20rather.%3C/p%3E%3Cp%3EThe%20pelicans%20were%20back!%20%20I%20couldn't%20stop%20taking%20pictures%20of%20them%20perched%20on%20pilings%20and%20flying%20overhead.%20%20Other%20birds,%20like%20egrets%20and%20blue%20herons%20had%20returned%20too%20(although%20not%20in%20the%20numbers%20I%20saw%20before%20BP).%3C/p%3E%3Cp%3EThis%20year%20we%20outdid%20ourselves,%20throwing%20in%20some%20extra%20activities.%3C/p%3E%3Cp%3ELike%20crabbing%20in%20Lake%20Hermitage%20w/%20grandpa.%3C/p%3E%3Cp%3EAnd%20a%20crab%20boil.%3C/p%3E%3Cp%3EAnd%20BB%20gun%20mania.%3C/p%3E%3Cp%3EDahlin',%20you%20know%20you%20passed%20a%20good%20weekend%20when%3C/p%3E%3Cp%3E%22fun%20&%20exhausting%22%3C/p%3E%3Cp%3Esum%20it%20up.%3C/p%3E%3Cp%3EAnd%20no%20one%20shot%20their%20(or%20anyone%20else's)%20eye%20out.%3C/p%3E%3Cp%3EA%20couple%20of%20years%20before%20he%20died,%20my%20grandpa%20gave%20me%20From%20Woodstoves%20to%20Microwaves...Cooking%20with%20Entergy,%20a%20cookbook%20published%20in%201997%20by%20the%20electric%20company%20in%20New%20Orleans.%20It's%20more%20than%20a%20cookbook,%20it's%20New%20Orleans%20food%20history.%20The%20cookbook%20is%20a%20collection%20of%20recipes%20that%20Entergy%20mailed%20alongside%20it's%20customer's%20bills%20and%20used%20in%20cooking%20demonstrations%20(to%20show%20people%20how%20to%20use%20modern%20appliances).%20Recipes%20that%20reflect%20what%20the%20people%20of%20New%20Orleans%20eat%20and%20have%20eaten%20for%20many%20years.%20The%20introduction%20to%20From%20Woodstoves%20to%20Microwaves%20explains:%3C/p%3E%3Cp%3EI%20love%20to%20flip%20through%20this%20book,%20reminding%20myself%20of%20meals%20eaten%20on%20Sunday%20afternoons%20at%20my%20great-grandma's%20house,%20or%20dishes%20my%20grandpa%20experimented%20with.%3C/p%3E%3Cp%3EToday's%20fish%20recipe,%20Catfish%20Divan,%20is%20an%20adaptation%20of%20a%20recipe%20found%20in%20this%20book.%3C/p%3E%3Cp%3EI%20absolutely%20loved%20this%20dish!%20So%20much%20that%20I%20made%20it%20twice%20last%20month.%20The%20fish%20is%20first%20poached%20in%20white%20wine%20and%20green%20onions.%3C/p%3E%3Cp%3EWate%20not%20want%20not...the%20poaching%20liquid%20is%20used%20in%20the%20sauce.%20The%20tasty,%20tasty%20sauce.%3C/p%3E%3Cp%3ECatfish%20Divan%3C/p%3E%3Cp%3Eadapted%20from%20From%20Woodstoves%20to%20Microwaves%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350.%3C/p%3E%3Cp%3ERub%20the%20fish%20fillets%20with%20the%20cut%20side%20of%20the%20lemon.%20Add%20green%20onions%20and%20wine%20to%20a%20shallow%20pan%20large%20enough%20for%20the%20fish%20to%20fit%20in%20one%20layer.%20Place%20the%20fish%20in%20the%20pan.%20Simmer%20over%20low%20heat,%20basting%20occasionally,%20until%20the%20fillets%20begin%20to%20flake.%3C/p%3E%3Cp%3EIn%20a%20saucepan,%20melt%20the%20butter%20over%20low%20heat.%20When%20the%20butter%20bubbles,%20add%20the%20flour%20and%20stir.%20Cook%20for%20a%20few%20minutes,%20then%20stir%20in%20the%20half%20&%20half,%20about%203/4%20tsp%20salt,%20and%201/2%20cup%20of%20the%20cooking%20liquid.%20Stir%20while%20cooking%20until%20the%20sauce%20thickens%20and%20bubbles,%20about%204%20minutes.%20Stir%20in%201/4%20cup%20Parmesan%20cheese%20and%20squeeze%20the%20remaining%20juice%20from%20the%20lemon%20half%20into%20the%20sauce.%3C/p%3E%3Cp%3EGrease%20a%20casserole%20dish%20large%20enough%20to%20lay%20the%20fish%20flat%20in%20one%20layer.%20Place%20the%20fish%20in%20the%20casserole%20and%20season%20with%20the%20remaining%20salt%20(or%20to%20taste)%20and%20with%20black%20pepper.%20Top%20with%20the%20broccoli.%20Pour%20the%20sauce%20over%20the%20broccoli,%20sprinkle%20with%20remaining%20Parmesan%20cheese%20and%20the%20sliced%20almonds.%20Bake%20at%20350%20for%20about%2020%20minutes,%20or%20until%20bubbly.%3C/p%3E%3Cp%3Elinking%20with:%3C/p%3E%3Cp%3ECookbook%20Sundays%3C/p%3E%3Cp%3ESee%20Ya%20In%20the%20Gumbo%20%2313%20potluck%20open%20until%20Friday,%20Jan%2013th%3C/p%3E){kind=link}
