- 10oz (300gr) cream cheese, softened
- 8oz (240gr) butter, softened
- 2 1/2 cups powdered sugar
- 2 tsp vanilla
- 1/2 cup, chopped

%20there%20IS%20a%20difference.%3C/p%3E%3Cp%3EI%20got%20out%20my%20trusty%20box%20graters%20(I%20have%20a%20set%20of%203)%20and%20found%20the%20one%20with%20the%20smallest%20holes.%3C/p%3E%3Cp%3EI%20made%20carrot%20juice.%3C/p%3E%3Cp%3EI%20moved%20up%20to%20the%20second%20smallest%20holes%3C/p%3E%3Cp%3EI%20got%20nicely%20grated%20carrot,%20but,%20at%20the%20speed%20I%20was%20going,%20it%20would%20have%20taken%20a%20week%20or%20longer%20to%20get%20the%20required%202%20cups.%3C/p%3E%3Cp%3EI%20moved%20up%20to%20the%20third%20smallest%20holes.%3C/p%3E%3Cp%3EI%20got%20shredded%20carrots.%3C/p%3E%3Cp%3EI%20went%20back%20to%20the%20second%20smallest%20holes%20and%20decided%20to%20ramp%20my%20speed%20up%20a%20bit.%3C/p%3E%3Cp%3EThat%E2%80%99s%20when%20I%20grated%20my%20thumb.%3C/p%3E%3Cp%3EThe%20little%20holes%20were%20sharp%20and%20nicely%20removed%20the%20skin%20from%20the%20first%20knuckle.%3C/p%3E%3Cp%3EI%20hate%20it%20when%20I%20do%20that.%3C/p%3E%3Cp%3E(BTW%20%E2%80%93%20Shredding%20my%20thumb%20would%20have%20been%20much%20more%20serious.)%3C/p%3E%3Cp%3EThat%E2%80%99s%20when%20I%20finally%20remembered%20the%20nice%20little%20rotary%20grater%20mon%20mari%20bought%20for%20grating%20Parmesan%20(one%20of%20his%20kitchen%20jobs).%3C/p%3E%3Cp%3EIt%20was%20white%E2%80%A6.%20Now%20it%E2%80%99s%20orange.%3C/p%3E%3Cp%3EIt%20worked%20a%20treat%20for%20the%20carrots,%20and%20it%20only%20took%20an%20hour%20to%20finish%20grating%20them%20(after%20I%20bandaged%20my%20thumb).%3C/p%3E%3Cp%3ECarrot%20Pecan%20Cake%20with%20Cream%20Cheese%20Frosting%3C/p%3E%3Cp%3ETotal%20time:%2060%20minutes%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EInstructions:%3C/p%3E%3Cp%3EButter%20and%20flour%20a%2010%E2%80%B3%20(25cm)%20tube%20pan%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350F%20(175C)%3C/p%3E%3Cp%3ECream%20oil%20and%20brown%20sugar.%3C/p%3E%3Cp%3EAdd%20yogurt%20and%20mix%20well.%3C/p%3E%3Cp%3EAdd%20eggs,%20one%20at%20a%20time,%20mixing%20well%20after%20each%20egg.%3C/p%3E%3Cp%3ECombine%20dry%20ingredients%20and%20add%20to%20wet%20ingredients,%20folding%20in%20with%20a%20spatula.%3C/p%3E%3Cp%3EAdd%20carrots%20and%20pecans,%20folding%20gently.%3C/p%3E%3Cp%3EPour%20into%20prepared%20pan%20and%20bake,%2045%20minutes,%20or%20until%20toothpick%20inserted%20into%20center%20comes%20away%20clean.%20Start%20testing%20after%2040%20minutes.%3C/p%3E%3Cp%3ERemove%20and%20cool%20for%2010%20minutes,%20then%20remove%20from%20pan%20and%20allow%20to%20cool%20completely.%3C/p%3E%3Cp%3ECream%20Cheese%20Frosting:%3C/p%3E%3Cp%3ECombine%20cream%20cheese,%20butter,%20vanilla%20and%20sugar%20and%20whip%20until%20smooth.%3C/p%3E%3Cp%3EAdd%20more%20powdered%20sugar%20if%20too%20thin%20/%20a%20dollop%20of%20milk%20if%20too%20thick.%3C/p%3E%3Cp%3EFrost%20cake,%20then%20sprinkle%20with%20pecans.%3C/p%3E%3Cp%3EThis%20was%20seriously%20good%20and%20very%20moist.%3C/p%3E%3Cp%3EI%20served%20it%20with%20a%20drizzle%20of%20salted%20caramel%20sauce%20on%20the%20plate.%3C/p%3E%3Cp%3EIt%20was%20even%20better%20today%E2%80%A6..%20Although,%20there%20wasn%E2%80%99t%20a%20lot%20left.%3C/p%3E%3Cp%3EI%20found%20this%20recipe%20at%20Sally%E2%80%99s%20Baking%20Addiction.%20She%20said%20it%20was%20the%20best%20she%E2%80%99s%20had.%3C/p%3E%3Cp%3EI%20believe%20she%20is%20right!%3C/p%3E%3Cp%3EWe%20were%20six%20at%20dinner%20last%20night.%3C/p%3E%3Cp%3EThis%20morning%20we%20washed%2024%20glasses,%2054%20pieces%20of%20flatware,%2024%20plates%E2%80%A6%E2%80%A6%3C/p%3E%3Cp%3EAnd%20then%20had%20Carrot%20Cake%20for%20breakfast!%3C/p%3E%3Cp%3EThat%E2%80%99s%20why%20I%20don%E2%80%99t%20bake%E2%80%A6.%3C/p%3E%3Cp%3ELast%20Updated%20on%20June%2023,%202013%3C/p%3E%3Cp%3Ec%3C/p%3E){kind=link}
