  • 3 c. grated carrots
  • 4 x Large eggs
  • 1 1/4 c. vegetable oil
  • 2 c. white sugar
  • 2 c. sifted all-purpose flour
  • 2 tsp baking pwdr
  • 2 tsp baking soda
  • 1 tsp grnd cinnamon
  • 1 tsp salt
  • 1/2 tsp grnd nutmeg
  • 1 c. golden brown raisins (optional)
  • 1 1/4 c. confectioners' sugar
  • 1 x (3 oz) package cream cheese
  • 1 Tbsp. light corn syrup
  • 1/2 tsp vanilla extract

  1. Beat together the Large eggs, oil, and white sugar. Blend mix for thirty seconds.
  2. Sift together flour, baking pwdr, baking soda, salt and spices. Add in the carrots and raisins. Pour egg mix into dry ingredients, and mix well. Pour batter into well greased 10 inch tube or possibly Bundt pan. Bake at 350 degrees F (175 degrees C) oven for 45 to 50 min. Cold cake on wire rack, and then chill till completely cooled. To make Cream Cheese Glaze: Blend together confectioners' sugar, cream cheese, corn syrup, and vanilla. Spread over cooled cake.
