- Toss the carrots and parsnips with the flour, add in the Large eggs, chives, parsley and salt and pepper to taste. Mix till proportionately moistened.
- Heat 1/4 inch of peanut oil in a saute/fry pan till it is barely smoking. Drop in the batter by Tbsp. and flatten. Fry over medium heat till brown on both sides.
