- Here is a non-fat carrot cake which I highly recommend.
- Combine the dates and water in a small saucepan and boil uncovered over medium heat till the dates are soft and mushy. Mash with a fork.
- Preheat oven to 350F. Spray a 13"x 9" baking pan with nonstick coating.
- In a large bowl, combine dry ingredients.
- In a medium bowl, beat together the wet ingredients, EXCEPT the carrots.
- Add in the grated carrots and date paste to the wet ingredients, and mix well
- Add in wet ingredients to dry ingredients, mixing only till the flour is moistened.
- Pour batter into pan and bake for 30 to 35 minutes till cake is browned and a toothpick inserted in the center comes out clean.
