It’s Caribbean Food Week this week! From 18th – 25th August, Grace Foods are celebrating all things Caribbean, ending with the Notting Hill Carnival in London – which I have allllways wanted to go to. Where else can you dance down the street dressed in nothing but a glittery bikini and a few feathers without receiving any funny looks? (not that the looks usually stop me)
To celebrate Caribbean Food Week, I had a go at making a Caribbean-style recipe. %3C/p%3E%3Cp%3ETo%20celebrate%20Caribbean%20Food%20Week,%20I%20had%20a%20go%20at%20making%20a%20Caribbean-style%20recipe.%20A%20lot%20of%20Caribbean%20food%20is%20meat-based%20(and%20sometimes%20quite%20unusual%20meats,%20at%20that),%20but%20there%20are%20vegetarian%20options%20too.%20Next%20on%20my%20list%20are%20vegetarian%20Jamaican%20patties,%20but%20this%20time%20I%20thought%20I%E2%80%99d%20keep%20it%20simple%20with%20this%20sweet%20potato%20stew%20with%20blackeye%20beans.%20It%E2%80%99s%20rich%20and%20flavourful,%20and%20definitely%20makes%20me%20wish%20I%20was%20in%20the%20Caribbean!%3C/p%3E%3Cp%3EI%E2%80%99ve%20travelled%20to%20some%20amazing%20places%20in%20the%20last%20ten%20years%20or%20so,%20but%20unfortunately%20none%20of%20them%20have%20been%20in%20the%20Caribbean%20%E2%80%93%20so%20I%20can%E2%80%99t%20vouch%20for%20the%20authenticity%20of%20this%20stew.%20But%20if,%20like%20me,%20you%E2%80%99d%20like%20to%20do%20your%20bit%20to%20celebrate%20Caribbean%20food%20this%20week,%20I%20think%20this%20fits%20the%20bill%20pretty%20nicely.%3C/p%3E%3Cp%3EThe%20flavours%20in%20this%20stew%20are%20incredible%20%E2%80%93%20I%E2%80%99m%20loving%20the%20sweet%20/%20spicy%20combination%20lately!%20A%20lot%20of%20the%20flavour%20comes%20from%20the%20BBQ%20sauce,%20so%20make%20sure%20you%20choose%20a%20good%20one!%20I%20used%20this%20Jerk%20BBQ%20sauce,%20which%20added%20to%20the%20Caribbean%20vibe%20perfectly%20%E2%80%93%20it%E2%80%99s%20got%20just%20the%20right%20amount%20of%20sweetness%20and%20smokiness%20to%20flavour%20the%20stew%20without%20overpowering%20it.%3C/p%3E%3Cp%3EBut,%20there%20are%20plenty%20of%20other%20great%20flavours%20in%20this%20sweet%20potato%20stew,%20it%E2%80%99s%20not%20only%20the%20BBQ%20sauce.%20The%20chunks%20of%20sweet%20potato,%20kidney%20beans,%20black%20eyed%20beans%20and%20cabbage%20are%20also%20flavoured%20with%20tomatoes,%20coconut%20milk,%20spring%20onions,%20garlic,%20red%20chillis%20and%20veggie%20stock.%20It%20all%20adds%20up%20to%20a%20great%20stew!%3C/p%3E%3Cp%3EThis%20recipe%20makes%20a%20massive%20batch%20of%20sweet%20potato%20stew%20%E2%80%93%20I%20reckon%20it%E2%80%99ll%20feed%20at%20least%208.%20So%20it%E2%80%99s%20perfect%20for%20a%20big%20family%20gathering%20%E2%80%93%20leave%20it%20bubbling%20away%20and%20serve%20it%20up%20whenever%20everybody%E2%80%99s%20ready%20(my%20favourite%20thing%20about%20stew%20recipes%20%E2%80%93%20so%20low-maintenance!).%20If%20your%20family%20is%20smaller%20than%20that%20(like%20my%20itty%20bitty%20family%20of%20two),%20you%20could%20try%20freezing%20the%20leftovers,%20which%20is%20what%20I%20will%20be%20doing%20%E2%80%93%20I%E2%80%99ll%20report%20back!%20I%E2%80%99m%20even%20thinking%20of%20repurposing%20a%20bit%20of%20it%20into%20some%20sort%20of%20Caribbean-style%20enchiladas,%20what%20do%20you%20reckon?%3C/p%3E%3Cp%3EDo%20you%20think%20you%E2%80%99ll%20be%20making%20anything%20special%20this%20week%20to%20celebrate%20Caribbean%20Food%20Week?%20Or%20are%20you%20going%20to%20the%20Notting%20Hill%20Carnival?%20Keep%20an%20eye%20out%20in%20your%20local%20shops%20for%20any%20Caribbean-themed%20samples%20or%20promotional%20offers!%3C/p%3E%3Cp%3ECaribbean-style%20sweet%20potato%20stew%20%20%20%20%20%20%20%20Author:%20Becca%20@%20Amuse%20Your%20Bouche%20Recipe%20type:%20Main%20meal%20Yield:%208%20%20%20Ingredients%3C/p%3E%3Cp%3E1tbsp%20oil%201%20onion,%20diced%203%20spring%20onions,%20sliced%204%20cloves%20garlic,%20minced%202%20mild%20red%20chillis,%20finely%20chopped%201%20large%20sweet%20potato%20(mine%20weighed%20~500g),%20peeled%20and%20cut%20into%201cm%20dice%20400g%20tin%20chopped%20tomatoes%20500ml%20vegetable%20stock%203tbsp%20BBQ%20sauce%20(jerk%20flavoured%20is%20perfect)%201%20very%20small%20cabbage%20or%20half%20a%20medium%20cabbage,%20cut%20into%20strips%20(remove%20any%20tough%20stems)%20400g%20tin%20blackeye%20beans,%20drained%20(240g%20when%20drained)%20400g%20tin%20kidney%20beans,%20drained%20(240g%20when%20drained)%20200ml%20coconut%20milk%20(1/2%20a%20tin)%20Salt%20Black%20pepper%20Brown%20rice,%20to%20serve%20%20%20Instructions%3C/p%3E%3Cp%3EHeat%20the%20oil%20in%20a%20large%20casserole%20dish,%20and%20add%20the%20chopped%20onion,%20spring%20onions,%20garlic,%20red%20chillis,%20and%20diced%20sweet%20potato.%20Cook%20everything%20over%20a%20medium%20heat%20for%205%20minutes,%20stirring%20regularly,%20until%20the%20onion%20is%20almost%20soft.%20Pour%20in%20the%20chopped%20tomatoes,%20vegetable%20stock%20and%20BBQ%20sauce,%20mix%20well,%20and%20cover%20with%20a%20lid.%20Leave%20to%20simmer%20gently%20for%2010%20minutes.%20Add%20the%20chopped%20cabbage%20and%20the%20two%20tins%20of%20beans,%20as%20well%20as%20the%20coconut%20milk.%20Cover%20again,%20and%20simmer%20for%20a%20further%2010%20minutes.%20When%20the%20sweet%20potato%20is%20fully%20cooked%20and%20everything%20is%20piping%20hot,%20season%20to%20taste,%20and%20serve%20with%20brown%20rice.%20%203.2.2708%3C/p%3E){kind=link}
