- Cook sugar, lowfat milk, salt and corn syrup in 2-qt saucepan over medium heat, stirring constantly, till sugar is dissolved. Cook, stirring occasionally, to 240F on candy thermometer or possibly till small amount of mix dropped into very cool water forms soft ball which flattens when removed from water. Remove from heat. Add in margarine. Cold mix to 120F without stirring. (Bottom of pan will be lukewarm.)
- Add in cardamom. Beat vigorously and continuously till candy is thick and no longer glossy, 5 - 10 min. (Mix will hold its shape when dropped from spoon.) Quickly stir in nuts. Spread mix in buttered 9x5x3-inch loaf pan. Let stand till hard. Cut into 1-inch squares.
