When I think of cardamom, my waters for a Christmas time favorite cardamom bread. But Gregory, hungry for cookies and eager to bake, discovered this recipe in the always faithful Good Housekeeping Illustrated Cookbook. He’s a fan of the savory cardamom spice and decided to give these a try.

It’s also worth noting that this is a cookie with nuts for kids who don’t like nuts in their cookies.

Neither of my kids tend to be fond of nuts in cookies, brownies or other baked goods, yet they had no trouble gobbling these amazing morsels. Not a single mention was made of there being a walnut in the middle.

These cookies were also a hit as they were easy enough to put together.

The flavor was buttery, rich, and the cardamom with a hint of almond delighted the taste buds.

Cardamom Cookies

1. Preheat oven to 350 degrees.

2. Into a large bowl, measure flour, softened butter, walnuts, almond extract, cardamom, salt and 1 1/2 C confectioners sugar.

3. With hand, knead until well blended.

4. Shape dough into 1 inch balls. Place balls of dough, 2 inches apart on cookie sheets.

5. Bake 20 minutes or until lightly browned.

6. Gently remove cookies to wire rack; cool.

7. Before serving, cookies may be rolled in more confectioners’ sugar.

Store tightly covered.
