It looks like we are heavily into appetizers and dips at Eliot’s Eats and you would not be incorrect with that assumption.
We love us a good dip!
Today’s recipe will continue that theme with Caramelized Onion Dip.
This recipe came into being after another challenge from The Hubs. It was a late night and we had just pulled into a stopover town while traveling. (I think it was either Ft. Smith or Little Rock….I sometimes mix them up.) We stopped at a Cajun-themed restaurant because that was about all that was open. We tried their hot onion dip and fell in love.
Here is my rendition of that lovely appetizer.
Caramelized Onion Dip
from Eliot’s Eats
- 1 T. olive oil
- 1 large yellow onion, sliced thin
- 1/2 T. light brown sugar
- 1 pkg. (8 oz.) cream cheese (I always use the 1/3 Less Fat kind.)
- 1 c. mayonnaise
- dash of hot sauce (In this case, Carrot Karma.)
- 1 c. shredded Swiss cheese, divided
Heat olive oil in a large skillet. Add onions and brown sugar and sauté until brown in color, about 6 minutes.
Preheat oven to 350 degrees. Combine cream cheese, mayonnaise and hot sauce. Mix well with a whisk or process until smooth in a food processor. Stir in ½ c. cheese and onions. Prepare a small casserole dish with a cooking spray. Place mixture in dish and top with remaining ½ c. cheese. Bake for 20 minutes. Serve hot with crackers, pretzel chips, or crostini.
Note: You can also use Gruyere instead of the Swiss cheese if you wish. (Swiss is cheaper.)
Now, please forgive the photos. Last week was Parent/Teacher Conference time at our school which means that the teachers and staff are on duty for two long days. We start conferences right after school on Tuesday and Thursday and don’t get done until past 7:00 that evening. For some, that is a 12-hour straight day with little or no breaks.
For the past couple of years, the other building administrator and I take turns feeding the crew on these nights. My turn was Thursday and I made a massive quantity of Sloppy Joe’s (more about those later) and this onion dip along with a truly decadent dessert (more about that later, too).
This was scarfed up in no time. (Teachers are eaters, let me tell you now.)
So again, forgive the quality of photos of this appetizer as I had to take them at school with my phone. :) (And, since no one knows that I blog, I had to sneak them in.)
