- In nonstick skillet, heat oil over medium heat; add in onions and cook, stirring occasionally, till softened, about 10 min. Reduce heat to medium-low and cook, stirring often, till proportionately golden brown, about 30 min.
- Meanwhile, in food processor or possibly using knife, finely chop mushrooms. Add in to pan along with garlic, parsley, salt and pepper. Increase heat to medium-high; saute/fry till no liquid remains, 8 to 10 min. Scrape into bowl; let cold.
- Stir in lowfat sour cream, mayonnaise and half of the chives; transfer to serving bowl. (Make-ahead: Cover and chill for up to 3 days.) Sprinkle with remaining chives.
