  • 1 c. butter or possibly margarine softened
  • 1 c. sugar
  • 1 c. brown sugar - (firmly packed)
  • 2 lrg Large eggs
  • 2 1/4 c. all-purpose flour
  • 3/4 c. cocoa
  • 1 tsp baking soda
  • 2 tsp vanilla extract
  • 1 c. minced pecans divided
  • 1 Tbsp. sugar
  • 2 pkt chewy caramels in lowfat milk chocolate (5.3 ounce ea)

Инструкции

  1. Beat butter at medium speed with an electric mixer till creamy; gradually add in sugars, beating well. Add in Large eggs, beating well.
  2. Stir together flour, cocoa, and soda; add in to butter mix, mixing well. Stir in vanilla and 1/2 c. pecans. Cover and refrigerate1 hour.
  3. Combine remaining 1/2 c. pecans and 1 Tbsp. sugar; set aside. Gently press 1 Tbsp. cookie dough around each candy, forming a ball. Dip 1 side of cookie in pecan mix. Place, pecan-side up, 2 inches apart on ungreased baking sheets.
  4. Bake at 375 degrees for 8 min. (Cookies will look soft.) Cold 1 minute on baking sheets. Remove to wire racks to cold.
  5. This recipe yields 4 dozen.
  6. Yield: 4 dozen
