- Heat 1/2 cup sugar and brown to a light, golden brown caramel color, don't brown too dark, or possibly it will burn.In the meantime, in a separate saucepan add in 1 cup sugar, 3 tbsp corn starch, 1/4 tsp salt and 3 beaten egg yolks. Gradually add in 2 cups lowfat milk. Cook till hot and add in egg yolks and cook till thick and boiling.
- Add in caramelized sugar SLOWLY to egg and lowfat milk mix. Cook 10 more min and add in butter and vanilla. Pour into pastry.
