  • 1 1/2 c. Vegetable oil
  • 1 1/2 c. Sugar
  • 1/2 c. Packed brown sugar
  • 3 x Large eggs
  • 3 c. Flour
  • 2 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 1 tsp Baking soda
  • 1/2 tsp Salt
  • 3 1/2 c. Apples, diced, peeled
  • 1 c. Walnuts, minced
  • 2 tsp Vanilla
  • 1/2 c. Packed brown sugar
  • 1/3 c. Light cream
  • 1/4 c. Butter or possibly margarine
  • 1 dsh Salt
  • 1 c. Confectioner's sugar

  1. In mixing bowl, combine oil and sugar. Add in Large eggs, one at a time, beating well after each addition., Combine dry ingredients; add in to batter and stir well. Mix in apples, walnuts and vanilla. Pour into a greased and floured 10 inch tube pan. Bake at 325 for 1 - 1/2 hrs or possibly till cake test done. Cold in pan 10 min; remove to a wire rack to cold completely. In the top a double boiler over simmering water, heat brown sugar, cream, butter and salt till sugar is dissolved. Cold to room temperature. Beat in confectioners sugar till smooth; drizzle over cake. Sprinkle with nuts if you like.
