What's your favorite Thanksgiving dish? As far as turkey goes, I'll have the white meat, please. Mashed potatoes? Sure. Gravy? Why not...just a little. Stuffing? No. I'll skip stuffing any day. I know, I'm weird. (I've been told that I made great stuffing-- but I eat just one bite of it). What I really hold out for are sweet potatoes. As a kid, I could hardly wait for sweet potatoes with melted marshmallows, and that golden crust crunch. The best. .%20%20What%20I%20really%20hold%20out%20for%20are%20sweet%20potatoes.%20%20%20As%20a%20kid,%20I%20could%20hardly%20wait%20for%20sweet%20potatoes%20with%20melted%20marshmallows,%20and%20that%20golden%20crust%20crunch.%20%20The%20best.%20%20It%20wasn't%20until%20I%20was%20all%20grown%20up,%20that%20I%20first%20made%20this%20very%20recipe,%20%20while%20watching%20Emeril%20Lagasse's%20Food%20Network%20show%20back%20in%202002.%20%20%20This%20recipe%20is%20for%20grownups.%20%20It%20has%20fresh%20orange%20juice,%20vanilla%20bean%20and--%20bourbon.%20%20The%20funny%20thing%20is,%20I'm%20not%20a%20bourbon%20drinker.%20%20Never%20have%20been.%20%20But,%20this%20recipe%20has%20become%20a%20regular%20on%20my%20Thanksgiving%20table,%20now%20that%20my%20son%20and%20his%20cousin%20are%20all%20grown%20up.%20%20%20I%20begin%20with%208%20sweet%20potatoes,%20cut%20into%20bite-sized%20pieces.%20%20Of%20course,%20we%20need%20brown%20sugar.%3C/p%3E%3Cp%3ENext,%20water,%20fresh%20squeezed%20orange%20juice%20(not%20concentrate)%20and%20orange%20zest.%3C/p%3E%3Cp%3ETo%20me,%20sweet%20potatoes%20and%20cinnamon%20are%20meant%20for%20one%20another.%20%20I%20received%20a%20jar%20of%20Red%20Ape%20Cinnamon%20a%20year%20ago,%20and%20I%20really%20like%20it%20a%20lot.%20%20Is%20cinnamon%20just%20cinnamon?%20Well,%20yes,%20and%20no.%3C/p%3E%3Cp%3ESo,%20this%20is%20the%20cinnamon%20that%20I%20buy%20now--%20because%20I%20admire%20and%20respect%20that%20their%20product%20is%20%20all%20about%20being%20sustainable%20and%20organic%20products.%20I%20like%20value%20and%20support%20that.%3C/p%3E%3Cp%3ETwo%20teaspoons%20of%20cinnamon,%20some%20salt%20and%20vanilla%20bean.%20%20Well,%20folks,%20I%20also%20received%20a%20jar%20of%20Singing%20Dog%20Vanilla%20Bean%20Paste%20from%20the%20same%20lovely%20folks%20who%20sent%20me%20Red%20Ape%20Cinnamon.%20%20That%20was%20a%20year%20ago,%20and%20I%20have%20continued%20to%20buy%20this%20product%20as%20well.%20%20If%20you've%20never%20used%20vanilla%20bean%20paste,%20it%20will%20become%20your%20new%20best%20friend.%3C/p%3E%3Cp%3EVanilla%20bean%20paste%20is%20thick%20and%20tastes%20just%20as%20though%20you%20scraped%20an%20expensive%20vanilla%20bean.%20%20Your%20end%20product%20will%20have%20those%20lovely%20dark%20flecks%20of%20vanilla%20bean.%20Trust%20me.%20I%20love%20Red%20Dog%20Vanilla%20brand,%20not%20because%20I%20got%20to%20try%20it%20for%20free--%20I%20like%20it%20because%20it's%20also%20organic,%20sustainable%20and%20it's%20a%20quality%20product.%3C/p%3E%3Cp%3ESo,%20now%20the%20potatoes%20are%20cooking%20away%20with%20all%20those%20lovely%20note%20of%20orange,%20cinnamon%20and%20vanilla.%3C/p%3E%3Cp%3EOne%20they%20are%20fork%20tender,%20remove%20the%20potatoes%20and%20place%20them%20into%20an%20oven-proof%20dish.%20%20We're%20not%20through,%20though.%20%20The%20bourbon!%20%20As%20I%20said,%20I%20don't%20drink%20bourbon.%20%20So,%20I%20buy%20those%20small%20bottles%20at%20my%20local%20liquor%20store.%20(Clever,%20eh?)%3C/p%3E%3Cp%3EI%20only%20need%201/2%20cup,%20which%20I%20now%20add%20to%20the%20sauce.%20We%20want%20to%20boil%20the%20sauce,%20until%20it%20reduces%20to%20a%20syrup.%20%20Be%20prepared,%20this%20can%20take%20as%20much%20as%2030%20minutes%20(as%20opposed%20to%20the%20original%20recipe).%3C/p%3E%3Cp%3EI%20like%20to%20mark%20a%20wooden%20spoon%20with%20a%20rubber%20band,%20so%20I%20know%20where%20the%20liquid%20is%20at.%20%20Then,%20I%20can%20tell%20how%20much%20the%20syrup%20has%20reduced.%3C/p%3E%3Cp%3EThe%20sauce%20coats%20the%20back%20of%20a%20spoon.%20See?%20There%20are%20the%20vanilla%20bean%20flecks.%20%20I%20told%20you!%3C/p%3E%3Cp%3EPour%20the%20syrup%20over%20the%20potatoes%20and%20then%20place%20into%20a%20preheated%20oven%20at%20375F.%20%20Bake%20for%2010-15%20minutes,%20until%20browned.%20%20(I%20would%20think%20you%20could%20do%20all%20these%20steps%20a%20day%20or%20two%20ahead%20and%20then%20bake%20on%20Thanksgiving%20Day.)%20Remove%20from%20the%20oven%20and%20add%20a%20butter%20(I%20use%20about%201/2%20stick,%20though%20the%20recipe%20says%20to%20use%20a%20full%20stick)%20until%20incorporated.%3C/p%3E%3Cp%3EVERDICT:%20%20I%20love%20these%20sweet%20potatoes.%20%20Honestly,%20you%20don't%20taste%20booze.%20%20There's%20almost%20a%20caramel%20flavor,%20with%20a%20hint%20of%20bourbon...just%20a%20kiss.%20%20The%20balance%20of%20orange%20and%20sweet%20vanilla,%20with%20the%20cinnamon%20is%20truly%20a%20flavor%20party%20in%20your%20mouth.%20%20Anyone%20who%20eats%20these,%20always%20raves%20about%20them.%20%20I%20don't%20miss%20my%20marshmallows%20one%20bit.%3C/p%3E%3Cp%3EThe%20very%20nice%20folks%20at%20Singing%20Dog%20Vanilla%20have%20offered%20to%20give%20away:%3C/p%3E%3Cp%3Ethe%20end%20of%20each%20recipe%20post.%20If%20you%20cannot%20view%20it,%20you%20might%20be%20using%3C/p%3E%3Cp%3Ean%20older%20version%20of%20InternetExplorer.%20You%20should%20be%20able%20to%20view%20my%3C/p%3E%3Cp%3Erecipe%20cards%20with%20Safari,%20Mozilla,%20Google%20Chrome%20and%20Internet%20Explorer.%3C/
