  • 1 c. calamondin puree
  • 1 c. minced walnuts
  • 1 1/2 c. sugar
  • 2 large eggs
  • 1/2 c. lowfat milk
  • 3 T oil
  • 1 teaspoon salt
  • 2 1/2 c. flour
  • 3 1/2 teaspoon baking pwdr
  • 1/4 c. raisins
  • 1/4 teaspoon cloves
  • 1/4 teaspoon ginger
  • 1/2 teaspoon cinnamon

  1. Process about 12 large calamondins in the blender; use peel and pulp but remove seeds. Place 1 cup of this puree in large (4 qt size) mixer bowl. Add in next 6 ingredients and mix till well blended. Add in rest of ingredients and mix about 1 minute. Mixer will chop up the raisins. Pour into greased 9 x 5 x 3 inch loaf pan and bake at 350 degrees for about 1 hour and 15 min till it tests done; it is done when an inserted toothpick is removed with no batter adhering to it. Cool in the pan about 10 min and then turn it out onto a cooking rack.
