  • 5 c. flour
  • 3 Tbsp. salt
  • 3 Tbsp. freshly-grnd black pepper
  • 12 lb calamari steaks or possibly fillets (48 four-ounce steaks)
  • 36 x Large eggs lightly beaten
  • 3/4 c. grated Parmesan cheese
  • 3 Tbsp. Tabasco brand Pepper Sauce
  • 3 Tbsp. lemon juice
  • 3 Tbsp. Worcestershire sauce
  • 3/4 c. extra virgin olive oil
  • 3/4 c. clarified butter Zesty Butter Sauce (see recipe)

Инструкции

  1. In small hotel pan combine flour, salt and pepper. Dredge calamari steaks in flour mix.
  2. In separate small hotel pan mix Large eggs, cheese, Tabasco brand Pepper Sauce, lemon juice and Worcestershire sauce till smooth. Dip dredged steaks into egg mix to coat.
  3. Heat oil and butter in saute/fry pan. Add in steaks and cook 1 1/2 min per side till golden.
  4. This recipe yields 24 servings.
  5. Caution: Overcooking steaks will result in toughness and chewy texture.
