This recipe is really easy to throw together and packs the perfect amount of spice that is perfectly balanced with the cool refreshing salad.
I love cajun seasoning for grilled chicken. Cajun season typically is a blend of garlic powder, black pepper, paprika, onion powder, cayenne pepper, thyme, oregano and red pepper flakes. It does carry some good heat which is why I paired it with this gorgeous summer corn salad. A mixture of corn, bell peppers, red onion, avocado, scallion, lime juice, cilantro, salt and pepper. Its simple but so refreshing!
