%20to%20someone%20(a%20potluck,%20your%20husband%E2%80%99s%20students,%20the%20school%20bake%20sale,%20etc)%20and%20then%20sorely%20regretted%20it?%20Like%20selfishly,%20no-doubt-about-it%20contemplated%20coming%20up%20with%20some%20big%20fat%20lie%20of%20an%20excuse%20about%20why%20you%20could%20not%20contribute%20that%20dish?%3C/p%3E%3Cp%3EYeah%20I%20came%20this%20close%20with%20these%20bars.%3C/p%3E%3Cp%3EAlex%20and%20I%20actually%20made%20a%20double%20batch%20together,%20one%20batch%20for%20the%20teachers%20for%20conference%20meals,%20and%20one%20batch%20for%20John%E2%80%99s%20students.%20Almost%20neither%20batch%20left.%20I%20loved%20them%20that%20much.%20These%20bars%20are%20a%20coffee%20dessert%20lovers%20dream%20come%20true.%20They%20actually%20do%20not%20even%20need%20the%20chocolate%20chips,%20and%20I%20am%20not%20convinced%20I%20would%20use%20them%20next%20time.%20(If%20you%20are%20wondering,%20John%E2%80%99s%20students%E2%80%93the%20best%20fed%20students%20on%20campus%E2%80%93said%20these%20were%20the%20best%20things%20I%20had%20ever%20made!)%3C/p%3E%3Cp%3EGuys%20I%20have%20been%20so%20excited%20for%20this%20Creative%20Cookie%20Exchange.%20Coffee%20flavored%20desserts%20are%20one%20of%20my%20all%20time%20favorite%20sweets.%20I%20mentioned%20a%20few%20days%20ago%20that%20I%20had%20recently%20become%20re-obsessed%20with%20The%20King%20Arthur%20Flour%20Cookie%20Companion:%20The%20Essential%20Cookie%20Cookbook%3C/p%3E%3Cp%3Ewhen%20I%20made%20those%20Salty%20Sweet%20White%20Chocolate%20Cashew%20Bars.%20Well%20these%20Caf%C3%A9%20au%20Lait%20Bars%20are%20the%20recipe%20that%20kicked%20off%20the%20%E2%80%9Cre-obsession.%E2%80%9D%20I%20have%20had%20them%20bookmarked%20for%20ages,%20basically%20since%20I%20got%20the%20book.%20Possibly%20because%20John%20is%20not%20the%20world%E2%80%99s%20biggest%20coffee%20dessert%20fan%20(if%20you%20are%20wondering%E2%80%93he%20loved%20these)%20I%20had%20never%20gotten%20around%20to%20making%20them.%20What%20a%20mistake!%20if%20I%20sound%20a%20trifle%20crazed%20it%20is%20because%20I%20loved%20them%20that%20much.%3C/p%3E%3Cp%3EI%20hope%20you%20guys%20check%20out%20everyone%20else%E2%80%99s%20coffee%20and%20tea%20based%20cookies.%20What%20a%20great%20theme!%20Right!?%20I%20seriously%20want%20to%20make%20all%20of%20them!%3C/p%3E%3Cp%3EOne%20note%20about%20the%20optional%20miniature%20chocolate%20chips:%20The%20recipe%20suggested%20sprinkling%20them%20onto%20the%20hot,%20baked%20bars%E2%80%93but%20that%20really%20was%20not%20enough%20to%20help%20them%20stick%20much,%20so%20I%20have%20written%20the%20recipe%20below%20as%20adding%20the%20chips%20before%20baking%20if%20you%20want%20to%20use%20them.%3C/p%3E%3Cp%3ECaf%C3%A9%20au%20Lait%20Bars%3C/p%3E%3Cp%3ERecipe%20type:%20Dessert%3C/p%3E%3Cp%3ECuisine:%20cookies%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20325%20F.%20Line%20a%209X13%20baking%20pan%20with%20parchment%20paper%20that%20overhangs%20on%20at%20least%202%20opposite%20sides.%20Set%20aside.%3C/p%3E%3Cp%3EWhisk%20together%20the%20instant%20espresso%20and%20cream.%20Set%20aside.%3C/p%3E%3Cp%3EWhisk%20together%20the%20flour%20and%20sea%20salt.%20Set%20aside.%3C/p%3E%3Cp%3EBeat%20the%20eggs%20using%20a%20whip%20attachment%20(handheld%20mixer%20or%20stand%20mixer)%20until%20foamy%20and%20thickened.%20Add%20the%20sugar%20in%20a%20stream%20while%20running%20the%20mixer%20on%20medium%20low%20speed.%20Scrape%20the%20sides%20of%20the%20bowl%20down%20to%20completely%20incorporate%20the%20sugar.%20Then%20return%20to%20beating%20on%20medium%20high%20speed%20until%20the%20eggs%20are%20thick%20and%20pale%20yellow,%20about%203-5%20minutes.%3C/p%3E%3Cp%3EBeat%20in%20the%20vanilla%20and%20melted%20butter.%3C/p%3E%3Cp%3EAdd%20the%20flour%20mixture%20and%20mix%20in%20on%20low%20until%20mostly%20incorporated.%20Then%20finish%20folding%20by%20hand%20with%20a%20large%20spatula%20to%20completely%20incorporate%20the%20flour.%3C/p%3E%3Cp%3ERemove%201%C2%BD%20cups%20of%20this%20batter%20to%20a%20separate%20bowl.%3C/p%3E%3Cp%3EMix%20the%20espresso-cream%20mixture%20into%20the%20remaining%20batter%20in%20your%20original%20bowl.%20Spread%20this%20batter%20into%20the%20prepared%20pan.%3C/p%3E%3Cp%3ESpoon%20the%20reserved%201%C2%BD%20cups%20of%20%E2%80%9Cvanilla%E2%80%9D%20batter%20over%20the%20coffee%20batter.%20Then%20use%20a%20butter%20knife%20or%20a%20skinny%20spatula%20to%20swirl%20the%202%20together.%3C/p%3E%3Cp%3EIf%20desired,%20sprinkle%20the%20miniature%20chocolate%20chips%20over%20the%20top%20of%20the%20bars.%3C/p%3E%3Cp%3EBake%20for%2020-25%20minutes,%20until%20the%20center%20of%20the%20bars%20is%20set.%3C/p%3E%3Cp%3ECool%20completely%20then%20remove%20from%20the%20pan%20by%20the%20parchment%20paper%20overhang%20and%20slice.%3C/p%3E%3Cp%3E3.2.2298%3C/p%3E%3Cp%3EThe%20theme%20this%20month%20is%20Wake%20from%20Winter%20with%20Coffee%20and%20Tea%E2%80%93because%20unlike%20last%20month,%20now%20our%20Spring%20Fever%20has%20some%20basis%20in%20reality!%20Creative%20Cookie%20Exchange%20has%20decided
