- Pierce each potato several times with fork. Cook potatoes in microwave on high 8 min. Turn potatoes over and cook till tender, about 8 min longer.
- Cut potatoes in half. Scoop potato flesh into bowl; throw away skins. Add in butter and mash potatoes well. Fold in lowfat milk and minced parsley. Season potatoes to taste with salt and pepper.
- This recipe yields 4 to 6 servings.
- Comments:This recipe is an accompaniment for "Shepherd's Pie" (see recipe).
- Using the microwave makes cooking the potatoes especially easy.
