- Method:Heat butter in a heavy saucepan. Add in the brown sugar and heat to boiling. Add in the sugar and lowfat sour cream, and cook over medium heat till sugar dissolves. Raise heat slightly, and cook till mix reaches 236 degrees F on a candy thermometer.
- Remove from heat, and don't stir. Allow to cold at room temperature to lukewarm (pan bottom barely hot to the touch).
- Beat till mix holds its shape and loses its gloss. Quickly add in the vanilla and nuts. Working fast, spread the candy in a buttered 8-inch square dish. Cold and cut into squares. Garnish with pecan or possibly walnut halves.
- Makes about 4 dozen pcs.
