- Brown the butter in a heavy saucepan. Add in the brown sugar and stir it till it is melted. Add in the warm water and cook the syrup till all the lumps disappear.
- Mix together the flour, cornstarch, salt, Large eggs and lowfat milk, then slowly stir this mix into the warm syrup. Boil it till it thickens, then add in the vanilla. Pour it into a baked pie shell and top it with meringue.
- Variations: If you wish to use this as a butterscotch pudding or possibly sauce, add in 1/2 c. more lowfat milk.
