Butterscotch Cream Roll-Up ~ Cake Slice Bakers

Be careful what you wish for, you just may get it. I wanted to get out of my baking comfort zone and I’m proud to say, I’m there. This is a long read so bear with me please. The Cake Slice Bakers are baking from Vintage Recipes by Julie Richardson. This is my third cake and the biggest challenge I’ve met so far. On page 70 is the most gorgeous picture of the author’s Butterscotch Cream Roll-up. %20I%20was%20ready%20to%20roll,%20literally%20and%20figuratively.%20Now%20the%20fun%20really%20starts%20(eye%20roll).%20Time%20to%20make%20Butterscotch%20Whipped%20Cream.%20I%E2%80%99m%20thinking%20that%20this%20is%20going%20to%20be%20awesome,%20the%20ingredients%20are%20icy%20cold%20and%20my%20mixer%20is%20super%20cold%20as%20well.%20In%20goes%20the%20heavy%20cream.%20As%20I%20attempt%20to%20scoop%20out%20the%20butterscotch%20sauce%20I%20was%20met%20with%20resistance.%20It%20was%20solid.%20At%20this%20point%20I%20decided%20to%20do%20something%20self%20defeating.%20And%20this%20is%20how%20I%20felt:%3C/p%3E%3Cp%3EImagine%20the%20mess%20in%20my%20kitchen%20as%20the%20lump%20of%20hard%20cold%20butterscotch%20swished%20around%20with%20the%20heavy%20cream.%20Yeah,%20it%20was%20a%20crazy%20move.%20Then%20to%20make%20matters%20even%20worse%20I%20thought%20I%E2%80%99d%20soften%20it%20up%20a%20bit%20in%20the%20microwave,%20yeah%20right.%20Of%20course%20it%20didn%E2%80%99t%20whip%20up%20like%20it%20was%20supposed%20to.%20It%20was%20too%20late%20to%20start%20all%20over%20so%20Plan%20B%20it%20is.%20I%20made%20a%20stiff%20batch%20of%20buttercream%20and%20added%20half%20of%20the%20soupy%20butterscotch%20whipped%20cream%20to%20it.%20Geez%20oh%20Pete%20it%20was%20good%20and%20I%20was%20feeling%20like%20I%20had%20redeemed%20myself.%3C/p%3E%3Cp%3EThe%2012%C3%9716%20cake%20was%20cut%20into%20four%20equal%20pieces%20and%20the%20spread%20with%20half%20the%20buttercream%20and%20sprinkled%20with%20the%20toasted%20almonds.%20The%20first%20section%20was%20removed%20and%20rolled%20perfectly.%20Alrighty%20then!%3C/p%3E%3Cp%3EI%20didn%E2%80%99t%20place%20the%20second%20roll%20where%20I%20should%20have%20and%20removing%20it%20and%20placing%20it%20correctly%20was%20not%20an%20option.%20Enter%20the%20music%20from%20Jaws.%3C/p%3E%3Cp%3ESo%20again%20I%20had%20to%20roll%20with%20it.%20There%20was%20no%20way%20I%20could%20leave%20the%20top%20unfrosted%20to%20show%20you%20the%20swirls.%20My%20swirls%20took%20a%20turn%20towards%20lopsided,%20but%20man%20oh%20man%20is%20this%20cake%20good.%20The%20moral%20of%20this%20story%20is%20start%20early,%20read%20the%20recipe%202,%203%20or%204%20times%20and%20pay%20attention.%20The%20End.%3C/p%3E){kind=link}
