  • 1 pkt 12 ounce Butterscotch Chips
  • 6 Tbsp. Butter
  • 2 c. Graham cracker crumbs
  • 1 c. Finely minced walnuts
  • 2 pkt 8 ounce each cream cheese, soft
  • 1/2 c. Sugar
  • 4 x Large eggs
  • 1/4 c. Flour
  • 2 Tbsp. Lemon juice

  1. In a small heavy saucepan over low heat (or possibly in a microwave oven in a microwave safe bowl or possibly saucepan for 4 min on 70% power), heat the butterscotch chips and butter, stirring till smooth. If you use a microwave safe saucepan or possibly bowl, be sure to cover it.
  2. Transfer to large bowl. With a fork, stir in the graham cracker crumbs and walnuts till the mix resembles crumbs; reserve 2 c. for the topping. Press remaining mix into a 13 x 9 x 3 baking pan and bake in preheated 350F oven for 12 min.
  3. In a large mixing bowl, beat cream cheese and sugar till fluffy.
  4. Slowly add in one egg at a time, beating after each addition. Add in flour and lemon juice, and beat till smooth.
  5. Pour over warm baked crust, and sprinkle with reserved crumbs.
  6. Bake at 350F for 25 min. Cold completely in pan on wire rack.
  7. Cut into 2 x 1 inch bars. Refrigeratebefore serving.
