I promise I will do a recipe without winter squash next…..

But, as I may have mentioned, I have rather a lot of them.

I will have to admit I am quickly running out of new ideas. I’m thinking I’ll just go back to the beginning and make all the old ones over again.

If anything inspires me, I’ll share.

I used the ‘neck’ end of a butternut squash for these nice circles.

Butternut Squash Stacks

Total time: 25 minutes

Ingredients:

Instructions:

Heat 1 tsp oil and 1 tsp butter in a medium skillet.

Add shallots and sauté until tender and starting to brown, about 10 minutes.

Add walnuts, paprika, sage, pumpkin seeds, celery salt and honey.

Stir well to combine. Remove from heat and keep warm.

Heat remaining 1 tsp butter and 1 tsp oil in another medium nonstick skillet.

Add butternut squash slices and sauté until nicely browned, about 5 minutes.

Turn and brown the other side. Check with a sharp knife – if not done, reduce heat and cook a few minutes longer

Lay one slice of squash on each of two plates. Top with half the shallot mixture.

Put remaining squash slices on top, then remaining shallot mixture.

Things are changing here in France.

Well, things are changing around here, anyway.

Doctors are moving out of houses and into clinics. Can you imagine?!?

Next thing you know we’ll have little paper robes and lap blankies like in the US.

I remember my doc in the US. I doubt that she ever saw more than 10% of my body unclothed at any one time. She was always very careful to cover up one shoulder before she uncovered the other (so to speak…).

When I arrived for my appointment (in the US) I would be shown into a private exam room. A nurse would come in and hand me a gown. She would leave the room while I changed and put on the gown.

The doctor would then knock and ask permission to enter.

After the exam she left the room. I changed back.

A few minutes later she returned, knocked, and we finished the appointment.

Here my I go right into my doctor’s office…. A real office with a desk and a computer.

We greet each other, then she just says ‘strip’.

In the past I got to strip next to her desk while we chatted about how I was feeling.

Then I walked (naked) over to the scale to be weighed.

Then I walked (still naked) over to the exam table.

At no time did we bother with any sort of covering.

After the exam I got dressed while we chatted about whatever.

Now that she’s moved into the clinic and has a big, fancy office, there is an actual, partial wall separating the exam table and her desk.

Privacy?

Naw…..

She followed me around so we could talk while I got undressed.

It’s important to wear the good undies for doc appointments here.
