  • 4 x egg whites, at room temperature
  • 1/8 tsp baking pwdr
  • 1/8 tsp cream of tartar
  • 1 1/4 c. white sugar
  • 14 x graham crackers, broken into 1/2 inch pcs
  • 1 c. pecans
  • 1 c. whipping cream
  • 1/2 tsp vanilla extract
  • 1/2 c. minced pecans

  1. Method:1. Heat oven to 300 degrees F (150 degrees C). Lighty grease a 9 inch pie plate.
  2. In a large mixing bowl, beat egg whites and baking pwdr till soft peaks form. Add in cream of tartar, beating constantly. Add in 1 c. of the sugar, a Tbsp. at a time, beating constantly till stiff peaks form.
  3. Break graham crackers into 1 inch pcs. Fold graham crackers and pecan halves into the whipped egg mix. Spoon into pie plate.
  4. Bake pie for 30 minuntes, or possibly till wooden pick inserted in center comes out clean. Cold the pie to room temperature on a wire cooling rack.
  5. In chilled small bowl using chilled beaters, beat cream just till it begins to thicken. Add in the remaining 1/4 c. sugar and the vanilla to the cream, and continue beating till stiff peaks form. Don't overbeat.
  6. Place the flavored whipped cream on top of the cooled pie. Sprinkle pecans on the top, and chill till served.
  7. Makes 1 - 9 inch pie
  8. A crustless pie with a toasty flavor.
