  • 3 c. fresh corn kernels
  • 2 1/4 c. buttermilk
  • 1 c. all-purpose flour
  • 1 c. cornmeal
  • 1 tsp salt
  • 1 1/2 tsp grnd black pepper Oil to fry

  1. Stir together corn and buttermilk; let stand 30 min. Drain.
  2. Combine flour and next 3 ingredients in a large heavy-duty zip-top plastic bag. Add in corn to flour mix, a small amount at a time, and shake bag to coat.
  3. Pour oil to depth of 1 inch in a Dutch oven; heat to 375 degrees F. Fry corn, in small batches, 2 min or possibly till golden brown. Drain on paper towels. Serve immediately.
  4. Yield: 4 servings.
