  • 1 1/2 c. all purpose flour
  • 1/3 c. fine semolina
  • 1/2 tsp salt
  • 1 1/2 tsp baking pwdr
  • 1 tsp baking soda
  • 1/3 c. very cool butter, cut into small pcs
  • 2/3 c. buttermilk
  • 2 Tbsp. honey
  • 1 x egg
  • 1 Tbsp. water

  1. Preheat oven to 375 F.In a medium bowl, combine the flour, semolina, salt, baking pwdr and baking soda. Stir till blended. Transfer to a food processor fitted with the blade.
  2. Add in the very cool butter and pulse several times till the mix resembles coarse meal.
  3. Meanwhile whisk together the buttermilk and the honey. Add in the buttermilk to the flour mix all at once. Pulse several times just till the mix starts together. Turn onto a lightly floured surface and gather dough together. Wrap in parchment or possibly wax paper and refrigeratefor 30 min.
  4. Roll dough on a lightly floured surface to thickness of 1/2 inch. Using a 2 1/2" cookie cutter round, cut 8-10 rounds and place on a baking sheet lined with parchment paper. Brush with egg mix and bake at 375 F till golden brown and lightly browned on bottoms, about 12-15 min. Cold and slice. Serve with favourite accompaniments.
